One of my favorite side dishes is corn casserole. Every time I go home, my mom and stepdad make sure they have it at one of our meals! Last time I was home, I decided it was time to learn this recipe.
1/2 cup Kelapo Coconut Oil, melted
1 (8.5 ounce) package dry corn bread mix
1 (15 ounce) can whole kernel corn, drained
1 (14.5 ounce) can creamed corn
1 cup sour cream
1. Preheat oven to 350 degrees F and spray a 9×9 inch baking dish with Kelapo Coconut Oil Cooking Spray.
2. In a medium bowl, combine coconut oil, eggs, corn bread mix, whole and creamed corn, and sour cream. Spoon mixture into prepared dish.
3. Bake for 45 minutes or until the top is golden brown.
