Oreo Protein Pancakes
Ready to Eat!
School and college classes will be back in session within the next few weeks, so I’m already starting to plan quick and easy breakfast ideas. Breakfast is one of the most important meals of the day, which is why I try to get a balance of protein, carbohydrates, and healthy fats, such as coconut oil. Pancakes are always a quick and hearty meal, so I decided to get all my essential nutrients in them by adding in protein powder and coconut oil, which will give you an added energy boost in the morning.
To make these protein pancakes appealing for children, I chose to add in crushed Oreos. If you’re watching your sugar intake, this could also be a good weekend cheat meal breakfast. I am cautious of how much sugar I consume myself, so I only used 3 Oreos for the entire batch of pancakes. Feel free to add in any type of protein powder that you like. I’m using a cookies & cream protein powder for added taste. To make things quicker, I used the shake and pour Bisquick Shake ‘n Pour mix, which left prep time at around 5 minutes. Here’s what you’ll need:
Ingredients
1 Bisquick Shake ‘n Pour mix
1 tablespoon coconut oil, melted
1 scoop protein powder, I used cookies & cream
3 Oreos, crushed
Topping
2 tablespoons Hershey’s sugar-free syrup
Directions
Add 2/3 cup water to Bisquick mix and shake vigorously. Next, transfer batter to a medium size bowl.
Add in melted coconut oil, protein powder, and 2 crushed Oreos. Stir until all ingredients are completely combined.
Place skillet on medium-high heat, spray with Kelapo Coconut Oil Cooking Spray and pour pancake batter to make pancakes. Repeat until all batter is used.
Once pancakes are cooled, drizzle on the sugar-free Hershey’s syrup and the remaining Oreo.
The coconut oil really helps make these pancakes fluffy and moist, along with added flavor from the Oreos and protein powder. Feel free to get creative with added toppings for your little ones, such as white and dark chocolate chips!
