April Fool’s Day

What better way to play a prank on your family than with dinner! I found two delicious recipes that will definitely leave your family questioning your sanity (in a good way)! The idea behind it is to make a dessert style dinner and a dinner style dessert. My boyfriend loves playing pranks on me so rest assured today is my day to shine. He won’t see it coming!

April Fool’s Cake

While it may appear a cake on the outside it is anything but! This recipe is actually a pizza! Serve them each a slice of “cake” and tell them that’s what you prepared for dinner. Once they take the first bite they’ll realize they’ve just been fooled! I’ve substituted the butter with Kelapo Ghee and added salami as well. You can add ham or turkey to yours. I wanted to create sort of like a meat lover’s pizza, so I added extra meat. You can also add extra cheese but I decided on simply mozzarella.

Ingredients needed:

1 jar (14 ounces) of pizza sauce

½ lb of bulk Italian sausage (cooked and crumbled)

1 package (8 ounces) of sliced pepperoni

1 package 8 ounces of sliced salami

3 cups of biscuit/baking mix

¾ cup of whole milk

2 large eggs

2 tablespoons of Kelapo Ghee

1 teaspoon of garlic salt

5 to 6 slices of mozzarella cheese

Kelapo Ghee Spray

Start by preheating your oven to 375 degrees. In a medium-sized bowl, add in the sausage, pepperoni, salami and pizza sauce, and in a separate bowl combine the biscuit mix, milk, eggs, Kelapo Ghee and garlic salt. Make sure to mix the batter thoroughly. Take the cake pan (preferably a 10-inch fluted tube pan) and grease it with the Kelapo Ghee Spray. You’ll want to spread half of the biscuit batter on the bottom and with a non-stick spatula spread it up the sides. With a spoon, carefully add in the meat sauce, you mixed together, on top of the batter and after it’s spread all over add in the rest of the biscuit mixture to top it off.  Pop the pan in the oven and bake for 35 to 40 minutes or until the “cake” has turned brown. A good way to check if this is done is running a toothpick through it. If it comes out clear, you’re good to go! Once the “cake” is done baking, invert on a baking sheet and arrange the mozzarella cheese on top. Pop it back in the oven and bake for an extra 5 minutes to melt the cheese. Once the cheese is melted you’re ready to serve.

Ice Cream Tacos

Yes, ladies and gentleman, we are having ice cream tacos for dessert! Believe me, when I say, it tastes a lot better than it sounds and it’ll definitely have everything giving you curious looks.

Ingredients needed:

2 flour tortillas (6 inches)

½ teaspoons of ground cinnamon

2 tablespoons of canola oil

2 tablespoons of chopped pecans

2 tablespoons of sweetened shredded coconut

1 drop of green food coloring

1 cup of chocolate ice cream

¼ cup of whipped topping

6 maraschino cherries (halved)

In a bowl add in your ground cinnamon and sprinkle only one side of each tortilla with cinnamon. You’ll want to make sure there is enough ground cinnamon on both those sides. Then, n a large skillet add in the canola oil and add in the tortillas one at a time. You’ll want to heat them up with the cinnamon side facing up. When the tortilla starts to turn brown, fold into a taco shape and drain the excess oil on paper towels. In that same skillet, toss in the pecans so they can cook. They should be done in about 2 to 3 minutes or until they’re lightly toasted. In a small bowl add in your coconut flakes and the drop of green food coloring. Mix it all together until the flakes have turned green, resembling that of shredded lettuce. Once ready to serve, place a small scoop of chocolate ice cream in each tortilla she, top with whipped cream, cherries, pecans, and tinted coconut. “Dinner” is now served!
