Everyone is very conscious about their health and the products they put into their body. Veganism is becoming a popular “way of life” for more and more people every day! I don’t think I could become a full vegan but every now and then, it’s great to eat a good, clean meal. I have been browsing around the Internet trying to find easy, delicious vegan meals and I found one that spiked my interest. Vegan Creamy Pasta Salad With Artichoke Hearts is the perfect weekday lunch for anyone!
- 1/4 cup vegan mayonnaise
- 2 Tbsp. lemon juice
- 2 cups cooked whole wheat pasta (drained)
- 4 green onions, chopped
- 1 6-oz. jar artichoke hearts, drained
- 1/2 Tbsp. dried basil
Stir the mayonnaise and lemon juice into your cooked pasta. Add green onions, artichoke hearts and basil; stir well
This recipe makes 4 servings and I prefer to chill the pasta salad before eating.
