Mashed Sweet Potatoes

Ok, so I know it isn’t exactly sweet potato season, but I can’t get enough of them and am constantly looking for new ways to cook them.  These were the easiest and most delicious mashed sweet potatoes I have had, not to mention they are healthy too! Only 3 ingredients! Plus, they go with just about any entrée and satisfy that sweet tooth, so I am not running back to the kitchen after dinner trying to find some chocolate, cookies, or ice cream.  Did I mention there is no added sugar either! Alright enough about how delicious these sweet potatoes are, here is the recipe.

The Easiest Mashed Sweet Potatoes

Serves 2 -3

3 sweet potatoes

1-2 tablespoons Kelapo Coconut Oil

½ teaspoon ground cinnamon (add more if you are a cinnamon lover)

Preheat oven to 425 degrees F. Wash sweet potatoes by scrubbing them under running water then dry.  Poke a few holes in each sweet potato with a fork.  Wrap each sweet potato in foil.  Bake in oven for 1 hour or until fork inserted in potato easily goes in and potato is soft. Remove from oven and scrape insides of the sweet potato into a medium size bowl. Add coconut oil and cinnamon. Stir to combine and mash with a potato masher or just use a fork and the sweet potatoes should mash up easily. Serve with your favorite entrée and enjoy! I served mine with my recipe for skirt steak with chimichurri sauce. Yum!
