Whole Wheat Blueberry Pancakes

On Sunday mornings when I’m feeling ambitious I like to make blueberry pancakes from a whole wheat batter.  This morning I used Bob’s Red Mill whole wheat pancake mix.  Here is my not-so-secret pancake recipe: Ingredients: 1 cup whole wheat pancake mix 1 tablespoon coconut oil 1 cup Almond milk 2 cups fresh or frozen blueberries 1 egg 2 tablespoons vanilla Side notes: For vegan pancakes or allergy-free pancakes, use EnerG. egg re-placers, or applesauce for the 1 egg.
