To celebrate the luck of the Irish this fine Sunday morning I’ve decided to make two famous (and delicious!) Irish dishes! On Saint Patrick’s Day, the Irish celebrate their saint with festivals and feasts so it only seems fitting that this tradition continues, even here in the US. Lately I’ve been wanting to cook. Mainly because we just moved into our apartment and I haven’t been able to in several months. So tonight, Dave’s getting a special St. Patrick’s Day inspired dish of Roast Beef and Yorkshire Pudding. I completely replaced all the olive oil with coconut oil to give the dish great flavor.
