Pumpkin Oatmeal Cookies

pumpkin oatmeal cookies made with kelapo coconut oil

It’s fall season! Time to bring back the pumpkin spice! This pumpkin oatmeal cookie recipe is fun to make with the family in town. Using oats along with flour makes it a healthier alternative then your store-bought cookie mix. The Kelapo coconut oil also adds a more sweet flavor than your traditional vegetable or canola oil. Coconut Curry Chicken

coconut curry in bowl next to kelapo coconut oil

Over quarantine I was obsessed with curry. What’s good about this recipe is you can swap out the protein to whatever you’d like. You can make all sorts of dishes; fish, shrimp, or whatever is in your fridge! The magic is in the curry itself; creamy, delicious, and flavorful. The coconut milk along with the Kelapo coconut oil is a wonderful pair that makes this dish addicting. I’ve already made this dish three times this month!   Ingredients: Onion *diced Red Bell Pepper *diced Chopped Garlic (3 cloves) Kelapo Coconut Oil™ (2 tablespoons) Boneless skinless chicken *cut into cubes (3 breasts) Curry Powder (2 tablespoons) Ginger Powder (1 teaspoon) Full-Fat Coconut Milk (13.5 oz) Juiced Lime (1 lime) Salt and […]

Cajun Shrimp Skillet

cajin shrimp in a skiller next to kelapo ghee

If you enjoy spicy foods, you’re going to love this one!  Shrimp is one of my favorite proteins to use in meals. It’s light, low-cal, and high in protein! I use Kelapo ghee to give it that extra umph of flavor along with hot Cajun seasoning. I typically add a little extra, but add as much as your tastebuds can handle.   Ingredients: Large Shrimp *peeled and deveined (1 pound) Salt and Pepper Olive Oil (2 tablespoons) Kelapo Ghee ™ (2-3 tablespoons) Cajun Seasoning (2 tablespoons) Minced or Dried Garlic (1 tablespoon) Crushed Chili Pepper Flakes (1 tablespoon) Chopped Fresh Parsley Instructions: Using a large bowl, add in 1 pound of peeled and […]
