Macaroni and cheese is one dish that I will indulge on! There’s nothing better than pasta with warm, melted cheese and spices. Since consuming a heaping dish of macaroni and cheese can quickly add up the calories, fats, and carbohydrates, I set out to create a healthier alternative. Mac and Cheese Cauliflower

A lighter version of regular mac and cheese, this recipe replaces the macaroni with cauliflower florets.  I made this recipe last night and adapted it from a version found in Vegetarian Times magazine. Ingredients: 1 head cauliflower, cut into florets 1 head broccoli, cut into florets 3 tbsp unrefined coconut oil 2 cups almond milk 1 tsp minced garlic 2 cups sharp cheddar cheese 1/2 cup nutritional yeast 1 dash cayenne pepper 2 egg yolks 1 1/2 cups breadcrumbs Directions: 1. Chef Cristian’s Red Snapper Fillet

I chose Kelapo virgin coconut oil to pan-sear this fresh Red Snapper fillet. Coconut oil is non-greasy and heats up to the perfect temperature for quick pan-searing. For this recipe, I served the fish on top of organic purple beans (similar to conventional green beans) and organic cauliflower mash, which makes it a healthy, natural, low carbohydrate meal.
