Sweet Sunday Treats

Sunday’s, for me, are great for baking! I like to keep it simple so donuts, cookies and rice treats are my usual go-to treats. But sometimes the weekdays can be rough, and baking is always my solution! So if you’re having a difficult or even an amazing week, here are my simple baking recipes to help you through.

Maple Glazed Donuts

I love this recipe because it’s both paleo and gluten-free!

Ingredients needed:

Kelapo Coconut Oil Non-Stick Cooking Spray

1 ¼ cups of blanched almond flour

2 tablespoons of coconut flour

½ teaspoon unrefined sea salt

½ teaspoon of baking soda

2 eggs

4 tablespoons of coconut milk

4 tablespoons of real maple syrup

4 tablespoons of Kelapo Coconut Oil (melted)

½ teaspoon of vanilla extract

Maple Glaze

½ cup of raw cashews

¼ cup of real maple syrup

4 tablespoons of coconut butter

2 tablespoons of Kelapo Coconut Oil (melted)

2 tablespoons of filtered water

Begin by preheating your oven to 350 degrees. Grease the donut pan with Kelapo Coconut Oil Spray and set aside. In a medium-sized bowl, add the almond flour, coconut flour, salt, and baking soda, and using a non-stick spatula mix everything together. In a large bowl, add the eggs, coconut milk, maple syrup, coconut oil, and vanilla extract, and using a hand mixer stir everything together. Once everything is well-combined, add the dry ingredients and stir. Place the donut batter in a large Ziploc bag. Make sure to cut the end of the bag before putting the batter inside. Fill each of the donut pan rolls and give the pan a little shake once it’s all filled so the batter can settle. Pop the donuts in the oven and bake for about 18 to 20 minutes or until the toothpick comes out clean. Remove from the oven and let the donut cool for about 5 to 8 minutes before adding the glaze.

Maple Glaze

Place all the ingredients for the glaze inside a blender and blend at high speed. Make sure the consistency of the glaze is smooth and creamy before stopping. If the glaze is too thick then add a bit of water. You’ll wall to pour the glaze into a large shallow bowl, so you can dip each donut in it. Place on a wire rack to cool and enjoy.

S’mores Cookies

Now, this one I usually just buy the pre-made chocolate chip cookie dough but if you’re an expert baker, feel free to make it from scratch! This recipe from tasty has a video,

Ingredients needed:

16.5 oz cookie dough

½ cup of mini marshmallows

½ cup of graham crackers

Kelapo Coconut Oil Non-Stick Cooking Spray

Begin by preheating your oven to 325 degrees. Next, you’ll want to smash the graham cracker cookies to make sure they’re in pieces. Don’t over crush them because you don’t want crumbs. In a large bowl, add the chocolate chip cookie dough, mini marshmallows, and graham crackers. Using a non-stick spatula combine all the ingredients together while making sure they are evenly distributed. Grease a baking sheet with Kelapo Coconut Oil Spray and using an ice cream scooper place each scoop on the baking sheet. Pop the cookies in the oven and bake for 12 to 15 minutes.

Chocolate Peanut Butter Rice Treats

Well, that was a literal mouthful! This recipe is super easy to make but I found that the original recipe would be a lot better if you add Kelapo Ghee or butter. I’ve also added coconut oil to the recipe to better help melt the chocolate used on top.

Ingredients needed:

2 cups of peanut butter (divided)

1 tablespoon of Kelapo Ghee (or butter)

3 cups of small marshmallows

3 cups of crispy rice cereal

1 ½ cups of chocolate candy

2 cups of chocolate chips (melted)

2 tablespoons of Kelapo Coconut Oil

Kelapo Ghee Non-Stick Cooking Spray

In a medium-sized saucepan add in 1 cup of peanut butter, 1 tablespoon of Kelapo Ghee and 3 cups of small marshmallows. Turn the heat to medium and with a non-stick spatula stir continuously. You’ll want to decrease the heat to low and make sure everything is thoroughly mixed and melted. Then turn off the heat and add the crispy rice cereal and chocolate candy. Mix everything together again until it is all thoroughly combined. Instead of buttering your pan, I found it a lot easier to use the Kelapo Ghee Spray and just make sure the side is thoroughly coated. Next, add in the mixture to a 9×9 pan and with a non-stick spatula, pat it down until you have an even layer. Add in the 2 tablespoons of Kelapo Coconut Oil and the 2 cups of chocolate chips in a microwave-safe bowl. Pop in the microwave with 30-second intervals while making sure to stir each time. This will usually take about 2 to 2 ½ minutes. Once melted, pour over the rice treats and spread with a spatula.
