Super Bowl Sunday Appetizers

The Super Bowl is officially upon us! We are all looking forward to see the New England Patriots play against the Los Angeles Rams but are you party ready? Get out your shopping list because we have picked the top 4 appetizers to serve at your Sunday game day party! We’ve even thrown in a vegan recipe just in case you’ve got some vegan friends, and if you don’t, it’s still delicious and should definitely stay on your dish menu.

Pizza Tater Tots Skewers

Ingredients needed:

A bag of tater tots

½ cup of pizza sauce

½ cup of sliced pepperonis

1 cup of shredded mozzarella cheese

Kelapo Ghee Spray

12-15 pre-soaked skewers

Preheat your oven to bake the tater tots based on the instructions on the packaging. Make sure they’re crispy! While your tots are in the oven, take the pepperoni and slice each circle in 4 ways. Once your tater tots are done baking, add 5-6 tater tots on each skewer. Next, you’ll spray the Kelapo Ghee Spray on your baking pan and lay out the tater tot filled skewers on top. It’s best to lay them next to each other so you can evenly add the ingredients on top. With a spoon, drizzle even amounts of pizza sauce over the tater tots. Next sprinkle your mozzarella cheese all over the tater tots and then add your slices of pepperoni’s. For all you cheese lovers, feel free to add more cheese! Then bake these bad boys for 10-12 minutes at 350 degrees. Cut and serve!

Vegan Spinach Artichoke Dip

Ingredients needed:

1 cup of raw cashews

½ cup of water

3 garlic cloves

Juice from 1 lemon half

½ cup of nutritional yeast

9-ounce bag of frozen spinach

1 14-ounce can of artichoke hearts

Salt and pepper to taste

Preheat your oven to 350 degrees. Combine the cashews, water, garlic and lemon juice in your blender and puree until it is very smooth. Then in an 8×8” oven-safe dish, fold the spinach, artichoke hearts and nooch into the cashew cream. Season with salt and pepper depending on your taste. Bake the dip at 350 degrees for about 20 to 30 minutes. Make sure the pan is uncovered on the top oven rack. Then just open a bag of pita chip and you’re ready to serve.

Honey Garlic Meatballs on a Slow Cooker

These are super easy and very delicious! Your guest will definitely be begging for more!

Ingredients needed:

32 oz bag of frozen meatballs

½ cup of brown sugar

1 cup of ketchup

4 tablespoons of soy sauce

½ cup of honey

1 tablespoon of minced garlic

Add your meatballs into the slow cooker and in a medium sized bowl whisk on the ingredients together. Once you’ve created the sauce pour it into the slow cooker to coat all the meatballs. Make sure to stir! Lastly, cook your meatballs on low for about 4 hours. Toss you meatballs in a large bowl and add some theme inspired toothpicks on the side for a fun kick! Get it?

French Onion Beef Sliders

Ingredients needed:

Kelapo Ghee Spray

8 tablespoons of Kelapo Ghee

2 large sweet onions (sliced)

2 lbs. of ground beef

2 tablespoons of beef base

1 tablespoon of Worcestshire sauce

Salt and pepper for taste

24 slider buns

12-16 ounces of gruyere cheese (chopped)

2 tablespoons of sesame seeds

1 tablespoon of fresh thyme

1 teaspoon of onion powder

1 teaspoon of garlic powder

Take 2 tablespoons of the Kelapo Ghee and add it to your skillet to melt over medium heat. Once the ghee has melted, add the onions and reduce the heat to medium low. Cook until the onions are lightly caramelized so about 25 to 30 minutes. Then in a large bowl add the ground beef, half of the beef base and ½ tablespoon of the Worcestershire sauce. Add salt and pepper to taste and mix thoroughly. Add the beef on the skillet with the onions and increase the heat to medium high. Make sure to break the beef and mixing the onion as you cook. Once the beef is brown, drain the excess grease. Preheat your oven to 350 degrees and lightly spray the Kelapo Ghee Spray on your baking sheet/pan. Separate the tops from the bottoms of your slider buns and place the bottom buns lightly on the baking sheet. Evenly distribute the cooked beef over the bottom buns and then top each one with the gruyere cheese. Cover with the tops buns and heat up the rest of your Kelapo Ghee and mix with the rest of your beef base and Worcestershire sauce. Then with a pastry brush, brush the butter mixture over the top buns and sprinkle sesame seeds, thyme, onion powder and garlic powder on top. You’re finally ready to bake! Make sure that when baking the cheese is fully melted and the tops of the buns are lightly brown so give about 18-22 minutes!
