Stuffed Tomatoes
It’s fall, which means it is officially comfort food season filled with pumpkin everything! It’s nice to prepare some light dishes during the fall, so you aren’t constantly feeling full and bloated. These stuffed tomatoes are the perfect weeknight, light meal. This recipe is pretty basic, you can alter it however you want. Add some rice, ground beef, ground turkey, quinoa, spinach, ricotta, or your favorite ingredient.

Stuffed Tomatoes
5 large tomatoes
Feta cheese
Fresh basil
Corn
Your favorite ingredients
Kelapo coconut oil cooking spray
Preheat oven to 350 degrees. Spray baking sheet with coconut oil cooking spray. Wash tomatoes. Cut tops off and hollow out each tomato with a knife or spoon. Stuff each tomato with an equal amount of each remaining ingredient. Place each stuffed tomato prepared baking sheet, spray each one with coconut oil cooking spray, and then cover with foil. Bake for 30 minutes or until tomatoes are cooked through. You can remove the foil during the last few minutes of cooking to brown the tops slightly, if desired. Serve with grilled chicken and crusty bread for a complete meal. Enjoy!
