Spider Web Mini Cheesecakes

Yum!

Only 1 more week until Halloween! Do you have your menu planned out for your Halloween party yet or are you looking for a yummy dessert to take with you to a party? This is a quick and easy recipe for mini cheesecakes and you can dress them up any way you want to make them a little spooky. I chose to create some spider webs out of chocolate frosting. You could also put mini graves on top, candy pumpkins, or if you are super creative you can draw something a little more complex than my spider webs. What is your go to Halloween recipe?

 

Spider Web Mini Cheesecakes

Crust:

1 1/4 cups crushed Oreo cookies

5 tablespoons Kelapo coconut oil, melted

Cheesecake:

2 – 8oz packages of cream cheese, softened

1/2 cup sugar

1/2 tsp vanilla extract

2 eggs

12 muffin liners

Heat oven to 350°F. Crush Oreo cookies with food processor until crumbs are fine with no big lumps. Stir in coconut oil until all crumbs are coated. Beat cream cheese, sugar and vanilla with mixer until well blended. Add eggs; mix just until blended.

Line a muffin pan with 12 muffin liners. Put a small amount of crust mixture in the bottom of each liner and press down with a spoon until it is formed into a flat crust. Top with cream cheese mixture.

Bake 20 min. or until centers are almost set. Cool. Refrigerate 3 hours. Decorate and enjoy!
