Slow Cooker Recipes for the Fall

Everything’s nice and sweet until someone pulls out their slow cooker and let me tell you! I mean so many recipes can be done on it but I have yet to try it out. Seeing as November has just begun, I thought it fitting to try some fall inspired recipes.

Uncle Jack’s Mac-and-Cheese from Southern Living

Now, doesn’t that just sound like fall and Thanksgiving all in one?

Ingredients needed:

1 package (16 ounces) of elbow macaroni

1 ½ cups of heavy cream

1 can (12 ounces) of evaporated milk

4 large eggs (beaten lightly)

½ cup of Kelapo Ghee (melted)

1 ½ teaspoons of table salt

½ teaspoon of freshly ground black pepper

4 cups (16 ounces) of shredded extra-sharp cheddar cheese

Kelapo Ghee Cooking Spray

                To make this delicious concoction, cook the macaroni according to the instructions on the packaging. Next, add the heavy cream, evaporated milk, beaten eggs, Kelapo Ghee, salt, ground pepper, cooked macaroni and 2 ½ cups of cheese into a bowl. Stir everything together. Then pour the macaroni mixture into a lightly greased (with Kelapo Ghee Cooking Spray) slow cooker. Add the remaining 1 ½ cups of cheese over the macaroni mixture. Cover the slow cooker and cook on high for 3 hours then reduce the slow cooker to low and cook for 1 more hour.

So after dinner comes desert! I’ve decided to try making something a little bit more light but tasty! I’ve never tried my hand at making granola but considering this recipe from Five Heart Home has  coconut oil and shredded coconut, I am willing to risk it all!

Ingredients needed:

4 cups of old-fashioned oats

2 cups of chopped nuts

2 cups of shredded coconut

¼ teaspoon of salt

½ cup of Kelapo Coconut Oil (melted)

½ of honey

1 cup of dried fruit (optional)

Kelapo Coconut Oil Cooking Spray

First up is getting your slow cooker ready. Coat the slow cooker with Kelapo Coconut Oil Cooking Spray. Add the oats, nuts, shredded coconut, and salt in it and stir. Add the melted coconut oil in a measuring cup then measure the honey on top. Pour them in and make sure to continually stir until all ingredients have blended well.

Next cover up the slow cooker so that the lid is askew. Cook on high for 30 minutes while occasionally stirring all the content until the granola is golden brown. This should take a total of 2 to 2 ½ hours to complete. If you notice the granola getting dark too then turn it down to LOW or stir more frequently.

Once the granola is complete, transfer it into a baking sheet making sure to spread evenly. Allow the granola to cool while stirring it until a crunchy consistency. Now you’re ready to add dried fruit or if you’re like me, drizzle some chocolate!
