Simple Scrambled Eggs

Breakfast is the most important meal of the day, in my opinion at least. Eating a nutritious meal in the morning helps to recharge your brain and body. It also helps adults be able to perform their very best throughout the day. “According to research, skipping meals, especially breakfast, can actually make weight control more difficult. Breakfast skippers tend to eat more food than usual at the next meal or nibble on high-calorie snacks to stave off hunger. Several studies suggest that people tend to accumulate more body fat when they eat fewer, larger meals than when they eat the same number of calories in smaller, more frequent meals. To teens, especially teenage girls, skipping breakfast may seem like a perfectly logical way to cut down on calories and lose weight. It’s important for moms to educate their kids about the importance of the morning meal and the role it plays in maintaining good health and preventing obesity.” – WebMD

So what can you do to make eating breakfast easier? You could try packing a breakfast the night before or making a smoothie to store in the fridge. Personally, I have just been trying to wake up earlier to ensure I eat breakfast. I woke up 15 minutes earlier than normal to make something for myself this morning. I decided to make eggs, such a simple and filling meal and a quick one at that! Eggs are packed with protein and B12; which is a vitamin that may help to increase your energy…perfect for the mornings! Adding coconut oil to your breakfast also may help with energy levels because of medium chain triglycerides. Here’s my recipe for a tasty breakfast:

Ingredients:

2 large eggs; room temperature

2 tablespoons milk or almond milk

1 tablespoon Kelapo Coconut Oil

Scrambled Eggs

Kelapo Coconut Oil Spray

Pepper and paprika; to taste

Directions:

  1. Heat skillet to medium-low heat, spray with Kelapo Coconut Oil Spray.
  2. Crack eggs into a bowl and add milk, coconut oil, pepper and paprika ; whisk together.
  3. Pour egg mixture into skillet and scramble.
  4. Remove eggs from heat and serve.

I like to serve my eggs with wheat toast but I’m not using butter on my toast anymore; I’m using coconut oil! I have found that the perfect way to get a nice coat of the coconut oil is to actually spray your toast with the Kelapo Coconut Oil Spray. As you can see I started out with two pieces of toast and only ended up with one; my toddler “stole” the second piece ;). I also like to set my eggs out a few minutes before I cook so they can get to room temperature. As you may know, coconut oil solidifies below 76 degrees so if you add coconut oil into cold eggs, the oil tends to become hard.  I prefer my coconut oil to blend nicely into the eggs!
