Roasted Garlic Mashed Potatoes 

Happy soon-to-be Thanksgiving everyone! Are you wondering what to bring to the family dinner this Thanksgiving? This quick and easy mashed potato dish will blow everyone away! What gives the potatoes that rich savory kick is the delicious roasted garlic. I use Kelapo Ghee to roast the garlic. Let me tell you, cooking garlic will have your house smelling like a 5 star steakhouse! Better make some 2 servings because this dish will be gone in the blink of an eye at your Thanksgiving dinner! 

Roasted Garlic Mashed Potatoes with Kelapo Ghee

Ingredients: 

Roasted Garlic 

  • 1 whole garlic bulb 
  • Kelapo Ghee 
  • Sea Salt 

 

Mashed Potatoes 

  • Peeled Potatoes (2 pounds) 
  • Sea Salt (2 teaspoons) *divided 
  • Kelapo Ghee (⅓ cup) * save extra on the side for serving 
  • Black Pepper 
  • Chopped Chives and Rosemary 

 

Instructions: 

  1. Begin by preheating the oven to 350 degrees Fahrenheit. 
  2. To make the roasted garlic, first trim the top of the garlic bulb. Next on a piece of foil, with the cut off side facing down. Drizzle the bulb with some melted Kelapo ghee and sprinkle it with a pinch of salt. Wrap up the bulb and place in the oven for 40 to 60 minutes. Once fully cooked, remove from the oven and let cool for a few minutes. Then, mash the garlic bulb into a paste and set aside. 
  3. To make the mashed potatoes, place 2 pounds of peeled potatoes in a large pot. Fill the pot with water enough to cover the potatoes by an inch. Bring the water to a boil and let cook for about 20 minutes. Once fully tender, drain the potatoes, saving 1 cup of the water on the side. 
  4. In a large bowl, mash the potatoes. Then use a spatula to add in the roasted garlic paste you had set aside earlier, ⅓ cup of Kelapo ghee, half of the saved potato water, 1 teaspoon of salt, and a few pinches of black pepper. Continue mixing while adding the rest of the potato water to the mixture. Top the dish off with chopped chives and rosemary. Serve and enjoy!
