Rich’s Weekday Healthy Start Muffins

Perfect start to any day!

I got a sweet email from my dad yesterday, sharing his healthy breakfast muffins, and I thought I would share, since his Homemade Peach Ice Cream was such a smash hit!

Rich’s weekday Healthy Start Muffins:

1 cup whole wheat baking mix (See below)

2  1/2 Tablespoons Kelapo

1/2 cup pecan pieces

1 ripe banana

1 egg

 

Bake about 30 minutes at 400.  Made six muffins.

Yum!

 

Rich’s Whole Wheat Baking mix

He makes this “whole wheat baking mix” that he uses for everything from muffins to waffles to pancakes and more.

It makes quite a large batch but will store nicely for a while!

 

4 1/2 cups whole wheat flour

4 1/2 cups unbleached white flour

1 cup dry milk

1/3 cup baking powder

2 T sugar

1 T salt

1  tsp cream of tartar

 

Mix up; for each 1 1/4 cups used for pancakes, waffles. biscuits, etc., I use 1/4 cup oil.  Have used canola oil in the past, but have found that Kelapo works great for waffles!  The original recipe called for 2 cups Crisco cut into the flour mixture, so this is healthier.  You can also sub 1/2 cup corn meal for some of the flour, or add other types of flour as well, like soy or rye or rice (about 1/4 to 1/2 cup) or even oat bran.
