Quick Turkey Meatloaf Muffins

This recipe is one of my favorites because it’s so quick to put together and gives you the amount of protein your body needs in a single serving! These turkey meatloaf muffins are great to take with you on the go and make wonderful leftovers. Here’s what you’ll need:

Turkey Meatloaf Muffins


2 Packages of ground turkey

4 Egg whites

1 Cup of dry oats

1 Onion

1 Red pepper

1 Teaspoon mustard powder

1 Teaspoon paprika

1 Teaspoon onion powder

1 Teaspoon garlic powder

1 Pinch of salt

1 Teaspoon ground black pepper

1 Tablespoon Kelapo Coconut Oil or Kelapo Coconut Oil Cooking Spray


Preheat the oven to 375 degrees.

Take out a muffin pan and grease each individual muffin cup with the coconut oil. If you have coconut oil cooking spray, then spray all areas of the muffin pan with that.

In a food processor or Magic Bullet, grind up the oats. They will turn into a fine powder after a few seconds.

Chop up the onion and rep pepper into fine pieces.

Place the ground turkey in a large bowl. Next, add the ground oats, egg whites, vegetables, and all seasonings in. Mix all ingredients well until they are blended together.

Fill each section of the muffin pan with a ball sized portion of the ground turkey mixture.

Bake for 40 minutes, let them cool off, and enjoy!
