Quick Go-To Meals When You’re Feeling Lazy

We’ve all been there! Feeling lazy after coming back from a long day at work, a training session or taking care of the kids takes a toll. It’s never a good idea to eat fast food so sit back and relax because we’ve got the perfect alternative for you! I’m going to share my top 3 under 30-minute dinner recipes. It’s the perfect way to eat something homemade while not spending too much time in the kitchen. Did I also mention they’re delicious?

Chicken Piccata

This recipe is the simplified and quick version of the original Chicken Piccata dish. Be aware it won’t taste exactly the same, but still very tasty!

Ingredients needed

1 large chicken breast (boneless and skinless)

Salt (to taste)

Pepper (to taste)

Flour (as needed)

3 tablespoons of Kelapo Ghee

½ cup of chicken broth

1 lemon (juiced)

2 tablespoons of capers

Take your chicken breast and cut it in half to create two separate fillets. Using meat tenderizer, pound each chicken breast until it’s thin. Sprinkle as much salt and pepper as you prefer on each fillet. Place the flour in a bowl and bread the entire chicken breasts with flour. Using a skillet, add the Kelapo Ghee and place over high heat. Once it’s melted, place each chicken breast on the skillet and cook until each side of the chicken has browned, about 3 to 5 minutes on each side. Once the chicken has finished, take out of the pan and set aside. Using that same pan add the chicken stock, lemon juice, and capers. Let the sauce boil for a couple of minutes until it reduced by ⅓. Place the chicken fillets back on the pan and spoon the sauce over the chicken several times so the chicken can soak in the sauce. Once finished, you’re ready to serve. This goes great with simple a pasta dish or mashed potatoes!

Honey Lime Garlic Butter Salmon

Salmon is by far the easiest for me to cook so recipes like this make it so simple for me on days when I’m getting home late from work.

Ingredients needed:

⅓ cup of Kelapo Ghee

¼ cup of honey

4 large garlic cloves (crushed)

2 limes (juiced)

2 ½ lb. side of salmon

Salt (to taste)

Pepper (to taste)

Lime slices (to serve)

¼ cup of parsley (chopped)

Kelapo Ghee Non-Stick Cooking Spray

Begin by preheating your oven to 375 degrees. Line a baking sheet with a large piece foil and fold the sides so the butter sauce does not leak. When doing this recipe, I like to spray a bit of our Kelapo Ghee Cooking Spray so the salmon doesn’t stick to the foil but it is not required. In a saucepan, add the Kelapo Ghee over low-medium heat so it can melt. Once melted, add the honey, garlic and lime juice, and whisk everything together until the honey has melted through the ghee. Make sure everything is well-combined before taking it off the stove. Next, place salmon on the greased baking sheet. Take the sauce and drizzle it all over the salmon, making sure to evenly coat it. Sprinkle salt and pepper on top. Add about 2 tablespoons of parsley on top. Pop in the oven and bake for about 15 to 18 minutes, depending on the thickness of fillets. Once that time has passed, change the setting to broil and leave it there for another 2 to 3 minutes on medium heat. The idea is to caramelize the top. Once it’s read, pop out the oven and garnish the rest of the parsley and fresh lime slices. This goes perfect with baked veggies like broccoli, carrots, asparagus or sweet potatoes.

Spaghetti with Tomato Cream Sauce

Ingredients needed:

1 lb. of spaghetti

2 tablespoons of Kelapo Ghee

3 garlic cloves (minced)

1 onion (diced)

1 can (28 oz) of crushed tomatoes

1 teaspoon of dried basil

½ teaspoon of dried oregano

½ teaspoon of dried parsley

½ teaspoon of crushed red pepper flakes

Kosher salt (to taste)

Ground black pepper (to taste)

1 teaspoon of balsamic vinegar

¾ cup of milk

¼ cup of heavy cream

¼ cup of grated parmesan cheese

2 tablespoons of chopped fresh parsley leaves

First thing’s first, cook your pasta by following the directions on the packaging. Once the pasta has finished, drain it and set aside. To make the sauce, add the Kelapo Ghee to a medium-sized skillet and place over medium heat. Once the ghee has completely melted add in the minced garlic and diced onion to the skillet. Cook for about 3 to 4 minutes, stirring occasionally. In that same skillet add the crushed tomatoes, basil, oregano, parsley, red pepper flakes, salt, and pepper. Stir all ingredients together until everything is well combined. Bring the sauce to a boil on medium-high heat and then reduce to low heat. You’ll cook the sauce for about 15 to 20 minutes, or until it has completely thickened. Make sure you stir occasionally as the sauce is cooking. Once it’s thickened, add in the balsamic vinegar and stir. Last, add the milk and heavy cream and stir until it is well-combined. Let everything cook for about 2 to 3 minutes on low. Now, you can take the pasta and serve the sauce on top, or mix the 1lb of pasta with the sauce, which is what I recommend. Garnish with parmesan and parsley, then enjoy!
