For those busy nights when you want to throw a quick dinner together, chicken stir fry is the perfect dish to make! You can use chicken that’s grilled, sautéed or baked. Just add your favorite sauces and veggies to complete this meal in no time. Here’s what you’ll need:
-1 pound of chicken breast
-1 bag of broccoli or broccoli slaw (add any of your favorite veggies)
-¼ cup water (if cooking with fresh vegetables)
-1 cup of cooked brown rice
-1 tablespoon coconut oil
-2 tablespoons teriyaki sauce (or your favorite sauce)
-Cook the chicken breast any way that you desire and season to your liking. Chop the cooked chicken into ½ inch cubes and set aside.
-In a large pan, place your broccoli and vegetables on medium heat until they start to warm up. Add ¼ cup of water and place a lid over to steam. This will take about 5 minutes.
-Set the steamed vegetables aside.
-In the same pan, add 1 tablespoon of coconut oil and 1 cup of brown rice. Mix both together until the rice starts to get warm.
-Next, add the chicken breast and vegetables to the browning rice.
-Drizzle the 2 tablespoons of sauce over the stir fry and mix well.
-Serve and enjoy!
