Pumpkin Oatmeal Cookies 

It’s fall season! Time to bring back the pumpkin spice! This pumpkin oatmeal cookie recipe is fun to make with the family in town. Using oats along with flour makes it a healthier alternative then your store-bought cookie mix. The Kelapo coconut oil also adds a more sweet flavor than your traditional vegetable or canola oil. Enjoy with the family by the fireplace and a cold glass of milk!

Ingredients: 

  • Kelapo Coconut Oil (½ cup) 
  • White Whole Wheat Flour (1 cup and 2 tablespoons) 
  • Old-Fashion Rolled Oats (¾ cup) 
  • Baking Soda (½ teaspoon) 
  • Pumpkin Pie Spice (1 teaspoon) 
  • Ground Cinnamon (1 teaspoon) 
  • Kosher Salt (½ teaspoon) 
  • Coconut Sugar OR Light Brown Sugar (½ cup packed*) 
  • 1 Large Egg Yolk 
  • Pure Pumpkin Puree (½ cup) 
  • Pure Maple Syrup (⅓ cup) 
  • Pure Vanilla Extract (1 teaspoon) 

 

 

Instructions: 

  1. Preheat the oven to 350 degrees Fahrenheit and line two baking sheets with parchment paper. 
  2. Melt ½ cup of Kelapo coconut oil in the microwave. Using a large bowl, mix together dry ingredients: 1 cup and 2 tablespoons of flour, ¾ cup of rolled oats, ½ teaspoon of baking soda, 1 teaspoon of pumpkin pie spice, 1 teaspoon of ground cinnamon, and ½ teaspoon of salt. 
  3. Using the bowl containing the melted coconut oil, add in ½ cup of coconut sugar and stir until combined. 
  4. Next, add one large egg yolk, ½ cup of pumpkin puree, ⅓ cup of maple syrup, and 1 teaspoon of vanilla extract. Whisk together until well combined. 
  5. Once all wet ingredients are combined, slowly add them into your bowl of mixed dry ingredients. Stir until evenly combined; do not over mix. 
  6. Start rolling your cookie dough into balls about 2 tablespoonsful. 
  7. Then, start placing your cookie dough balls on the lined baking sheet about 1 ½ inches separated.  
  8. Once the baking sheets are full, flatten the cookie dough balls lightly. Place in oven for about 11 to 12 minutes. 
  9. When the cookies are done baking, remove the sheets from the oven and let cool for about 4 minutes before serving. 
  10. Enjoy!
