Paleo Sweets
It is officially Friday the 13th, and do you know what that means? SWEETS ON SWEETS ON SWEETS. How scary is that? Let’s calm down because these delicious desserts are all Paleo-friendly, so basically made with the best ingredients possible (or at least that’s what I say). While Keto and Paleo are by no means the same diet, I’m still making these today.
Today we’re bingeing on sweets and hoping I don’t gain back those 10 lbs. I’ve lost. Scary, huh? Now let’s get to bakin’!
Paleo Chocolate Chip Banana Bread
These are gluten-free!
Ingredients needed:
4 large overripe bananas
3 large eggs
1/3 cup Kelapo Coconut Oil
¾ cup of coconut flour
1 teaspoon of vanilla extract
½ teaspoon of cinnamon
¼ teaspoon of salt
1 teaspoon of baking soda
2 teaspoons of baking powder
½ cup of chocolate chip
Kelapo Coconut Oil Non-Stick Cooking Spray
Begin by preheating your oven to 350 degrees. Grease a loaf pan with Kelapo Coconut Oil Spray. Next, in a large bowl add the bananas and using a fork mash them. In that same bowl add the eggs, coconut oil, coconut flour, vanilla extract, cinnamon salt, baking soda, and baking powder, and using a whisk mix thoroughly. Once mixed, fold in the chocolate chips using a non-stick spatula. Now, pour the batter in the loaf pan and add extra banana pieces on top. Sometimes I even add extra chocolate chips on top! Pop the pan in the oven and let it bake for about 40 to 45 minutes, or an until a toothpick comes out clean. Remove the banana bread from the oven, but make sure to let it cool down before serving.
If you’re feeling a little extra, melt down the chocolate chips, using ½ tablespoon of Kelapo Coconut Oil, in the microwave and drizzle it on top of the banana bread!
Paleo Coconut Flour Chocolate Cupcakes
Ingredients needed:
½ cup of coconut flour
½ cup of raw cacao powder
½ cup of honey
1/3 cup of Kelapo Coconut Oil (melted)
5 eggs
2 tablespoons of water
½ teaspoon of baking soda
½ teaspoon of apple cider vinegar
¼ teaspoon of sea salt
Kelapo Coconut Oil Non-Stick Cooking Spray
Frosting
4 tablespoons of coconut butter
2 tablespoons of raw cacao powder
Begin by preheating the oven to 350 degrees. Next, grease your choice of a muffin pan with Kelapo Coconut Oil Spray so your cupcakes don’t stick to the pan. In a large bowl, add all the ingredients and mix with a hand mixer. Once all the ingredients are thoroughly mixed, add the batter into the muffin tins and pop into the oven for about 20 to 22 minutes, or until the toothpick comes out completely clean.
To make the frosting, just place the coconut butter cacao powder in a bowl and use the hand mixer to whip them up. Scoop into a ziplock bag and cut one of the bottom edges. Once the cupcakes have cooled, add the frosting on top.
