One Pot Italian Chicken

Don’t get me wrong, I love to cook! But I can easily say I do not enjoy cleaning up a bunch of dishes after the fact. When I’m feeling especially burnt out, one pot dishes are my go-to! Super easy to clean and super easy to make! Plus when the flavors of garlic, sun-dried tomatoes, and ghee come together, my whole house smells amazing! Try it out for yourself!  

Ingredients: 

  • Olive oil (1 tablespoon) 
  • Kelapo Ghee (20g) 
  • Small Chicken Breasts Fillets (4) 
  • Finely Chopped Garlic (2 gloves) 
  • Sun-dried Tomatoes *sliced (80g/ ½ cup) 
  • White Wine (80ml/ ⅓ cup) 
  • Thickened Cream (250 ml/ 1 cup) 
  • Massel Chicken Style Liquid Stock (125 ml/ ½ cup) 
  • Baby Spinach (60g) 
  • Torn Fresh Basil Leaves (1 cup) 
  • Bread (side dish/optional) 

 

 

Instructions: 

  1. Using a frying pan, heat 1 tablespoon of olive oil and 20g of Kelapo ghee on high heat; until butter starts to foam. 
  2. Start seasoning the 4 chicken breasts with spices of your choice. Then, add to the pan. 
  3. Turn down the heat to medium high and cook the chicken breasts for about 5 minutes on each side. 
  4. Once the chicken is cooked through, move them over to a plate and then cover with aluminum foil; to keep warm.
  5. Using the same pan, add the 2 chopped garlic cloves. Cook the garlic for about 1 minute. 
  6. Then, add in ½ cup of sun dried tomatoes and ⅓ cup of white wine to the pan. Cook this mixture for about 1 minute. 
  7. Next, to the pan, add 1 cup of thickening cream and ½ cup of chicken stock. Now, return the cooked chicken to the pan and let simmer for around 5 minutes. 
  8. Then, add 60g of spinach to the pan until cooked. Lastly, sprinkle the dish with some fresh basil and bread of your choice on the side. 
  9. Enjoy!
