Mother’s Day Chocolate Truffles

 

Perfect Mother's Day Truffles

 

Looking for a great homemade Mother’s Day gift? Moms love homemade gifts from their kids, even if you are pushing 30 like me! The other thing moms love? Chocolate! The truffles in this coconut oil recipe are easy to make and wrap up all cute in our Mother’s Day Basket of Homemade Goodies.

 

 

 

 

 

Ingredients:

1 cup heavy cream

1/4 cup granulated sugar

1/4 cup Kelapo Coconut oil

1 lb semisweet chocolate chips (I like Ghirardelli)

1 tbsp Baileys Irish cream (or rum)

Toppings of your choice including coating chocolate, powdered sugar, cocoa powder, or ground nuts

1. Bring cream and sugar to a scald.

2. Stir in coconut oil.

3. Stir in chocolate.

4. Stir in liquor. Sneak a little sip from the bottle for some extra baking fun!

5 Refrigerate slightly, bring to room temperature, whip if desired to create a lighter truffle filling or leave as is for a chewy version.

6 Pipe or scoop out into a 1 inch ball onto a cold cookie sheet.

7 Refrigerate for at least 1 hour, then roll in melted coating chocolate, ground nuts, powdered sugar, or cocoa powder.  My favorite was the cocoa powder, Erin loved the chocolate covered truffles, and Jen chose the powdered sugar!

Put truffles in a clear plastic bag or jar and tie with a ribbon. Put in a pretty basket with a homemade card or Mother’s Day Poem, and voila!

But don’t forget to leave room in the basket for Tomorrow’s Post, an extra special homemade Mom-pampering foot scrub!
