Mother’s Day Brunch

While we might be celebrating this Mother’s Day at home, there’s nothing better than waking mom up with a homemade brunch! Celebrate your mom this year with a brunch fit for a queen. This brunch menu includes Sheet Pan Pancakes, Strawberry Scones and Granola Fruit Tart with Yogurt. Whether your mom loves pancakes or prefers a simple breakfast, she’ll enjoy any of these home-cooked meals made by you!

Sheet Pan Pancakes

Ingredients needed:

½ cup of banana slice

⅓ cup of fresh blueberries

¼ cup of fresh raspberries

3 large eggs

1 tablespoon of pure maple syrup

2 tablespoons of creamy peanut butter

1 ⅓ cups of all-purpose flour

2 ¼ teaspoon of baking powder

1 ¼ teaspoon of baking soda

3 tablespoons of chocolate chips (sweetened)

1 teaspoon of kosher salt

1 tablespoon of sugar

1 ⅓ cups of whole-wheat flour

¼ cup of Kelapo Ghee

3 cups of buttermilk

2 tablespoons of cream cheese

Kelapo Coconut Oil Non-Stick Cooking Spray

Start by preheating the oven to 500 degrees and then grease an 18×13 inch rimmed baking sheet with Kelapo Coconut Oil Spray. In a large bowl add the whole wheat flour, all-purpose flour, baking soda, baking powder and salt. Whisk the ingredients together until well-combined. In a separate small bowl, whisk in the buttermilk, eggs and 1 tablespoon of maple syrup. After they’re mixed, add the buttermilk mixture into the flour mixture and thoroughly mix. Into that same bowl, gently whisk in the Kelapo Ghee until the batter becomes lumpy then let stand for about 5 to 8 minutes. In the meantime, place the peanut butter in the microwave for about 1 minute in 20-second intervals until completely melted. Once melted, set aside. Next, whisk together the cream cheese and sugar until creamy consistency, then also set aside. Spread the pancake batter in an even layer on the prepped baking sheet. Drizzle the warm peanut butter over the upper left quadrant; swirl with a toothpick and top with banana slices. Sprinkle chocolate chips over the upper right quadrant, raspberries over the lower left quadrant, and blueberries over the lower right quadrant. Dollop small mounds of the cream cheese mixture over the blueberries. Pop the pancake pan in the oven and immediately reduce the temperature to 425 degrees. Bake for about 15 to 18 minutes, or until pancake is golden brown and a toothpick comes out clean. Clean everyone’s favorite slice and serve with maple syrup!

Strawberry Scones

This is for every momma’s that has a sweet tooth! These scrumptious strawberry scones will make any mom’s face light up.

Ingredients needed:

2 cups of strawberries (stemmed and cut into small pieces)

2 cups of all-purpose flour

3 tablespoons of sugar

2 teaspoons of baking powder

¼ teaspoon of salt

1 egg

6 tablespoons of Kelapo Ghee

2/3 cup of milk

1 egg for egg wash

1 tablespoon of turbinado sugar

Begin by preheating the 400 degrees. Chop up the strawberries into small pieces and add 1 tablespoon of sugar to them. In a large bowl, add the flour, salt, baking powder, and remaining sugar. Add the Kelapo Ghee to that bowl as well. Next, add the strawberries to the bowl and coat them well with the flour mixture. In a separate bowl, whisk the egg and milk together then add to the strawberry flour bowl. Using a spatula, mix everything together. Add more flour as needed if the dough is too wet and sticks to hands too much. Turn dough over onto a floured surface and shape into a round 8-inch ball. Cut the dough into 8 triangles, just like you would cut pizza and place the triangles over a cookie tray lined with parchment paper or a Silpat. Brush with the egg wash. Pop into the oven and bake for 20 to 30 minutes or until the scones are golden brown.

Granola Fruit Tart with Yogurt

My favorite breakfast to make when I want something simple and delicious. If your mom doesn’t like to start her day with a heavy meal then this is the perfect recipe to make!

Ingredients needed:

1 ½ cups of old-fashioned oats

1 cup walnuts (finely chopped)

1 tablespoon of sesame seeds

5 tablespoons of Kelapo Coconut Oil (melted)

¼ cup of honey

1 teaspoon of vanilla extract

½ teaspoon of ground cinnamon

2 cups of your favorite yogurt

4 cups of mixed fruit (strawberries, raspberries, blueberries, apples)

Kelapo Coconut Oil Non-Stick Cooking Spray

Begin by preheating the oven to 325 degrees. In a large bowl, mix the oats, nuts, seeds, melted Kelapo Coconut Oil, honey, vanilla extract, and cinnamon until thoroughly coated. Grease the mini tart pans with Kelapo Coconut Oil Spray. Next, press about 3 tablespoons of the oats mixture into each pan then use the back of an oiled spoon to help press the granola evenly across the pan and up the sides. Bake in the center of the oven for about 15 to 17 minutes or until golden brown. Once ready, remove the tart shells from the oven and use the back of the spoon to press down the centers of the crust to create more of an indentation and push up on the sides. Set tarts shells aside and let cool completely before removing from pan. Using a small knife, gentle release the sides of the crus, working around each side, then carefully remove it from the pan. The crust should be crisp on the sides and hold together but will be delicate. Fill each tart with about 4 tablespoons of yogurt and then smoothly event out. Arrange the fruit on top and serve immediately!
