Low Carb Buffalo Chicken Burger
Ok, even here in Florida it’s not really grilling weather yet. But that doesn’t mean you have to skip the burgers for tomorrow’s game. This recipe for a low-carb bite-sized burgers are perfectly paired with yesterday’s Gluten Free Avocado Fries. It’s like a WAY healthier version of one my favorite guilty pleasures.
This bite-sized burger still has a big kick!
I used chicken for this pattie because it’s a lean meat, but you can use lean beef or turkey. As a nod to another football game day favorite, Buffalo wings, I put added hot sauce and pepper jack cheese. Yum! So how did I get this to be low carb? I replaced the bun – for a tomato! This does make it a little messy to eat, so next time I might try to take the seeds out. Just in case you can’t wait any more, here’s what you’ll need for this recipe.
Ingredients:
1 lb ground chicken
2 tbls hot sauce (like Texas Pete or Tabasco)
1 tsp garlic powder
Salt and pepper to taste
1-2 tbls Kelapo Coconut Oil
2 slices pepper jack cheese (optional)
6 Campari tomatoes
Directions:
Mix meat, hot sauce and seasoning in bowl until well blended. Form six patties and set aside.
Heat coconut oil over medium high heat. Add patties a few at a time, to not crowd the pan. Cook each side about 5 minutes, or until done all the way through. When almost done, place cheese on pattie and heat until melted.
Meantime, slice small piece from bottom of tomato to make flat edge (this way the “bun” will stand up), then slice in half. Place fully cooked burgers on sliced tomato and dig in.
I think I might just start making this to take to lunch with me! They were so delicious and easy to make. If you’re still making your game day menu, you should make sure our Spicy Chicken Nachos make the cut.
