Kelapo Spiced Cupcakes

We attended Expo East in Baltimore a few weeks ago where we unveiled our new logo and labels.  At our booth we served Kelapo Spiced Cake made with coconut oil.  It was a huge hit, so we just knew we had to share the recipe with you.  Make this perfect fall recipe for your next get together, but remember to double or triple this recipe.

 

Makes 4 cupcakes

Ingredients:

2 1/2 cups flour

2 tsp cinnamon

1 tsp baking powder

1 tsp baking soda

1 tsp salt

1 tsp ginger

1 tsp ground cloves

1 tsp nutmeg

1/2 cup Kelapo coconut oil, soft

3/4 cup sugar

3/4 cup brown sugar

2 eggs

1 1/2 tsp vanilla

1 cup buttermilk

 

Sift together first 8 ingredients. Cream Kelapo in a mixing bowl; add sugars, eggs, and vanilla. Beat at high speed 5 minutes or until fluffy. Add dry ingredients, alternating with buttermilk, mixing just until smooth. Pour batter into greased and floured cupcake pans. Bake at 350 degrees for 25-30 minutes, or until a toothpick comes out clean.  Cool completely before frosting with your favorite cream cheese recipe!

    These are very tasty. I made something like this back in the fall and everyone loved them. Now I got to try them with coconut oil!
