We bought the Breville Juicer and love it!  Our go to juice is a Green Monster.  It is full of spinach, kale, celery, green apples, and ginger.  The first time that I used the juicer I was surprised by how much byproduct of the vegetables is left over.  Not really thinking, I tossed it all down the garbage disposal.  Then I felt really guilty because I thought of the years that my grandmother preached to not waste anything, especially good greens that are perfect for composting.  Unfortunately, I don’t have the time or space for composting.  If you do, then I guess the juicing leftovers are perfect to add to your soil collection.  For the rest of us, what to do with the leftovers?

The next time I juiced, I decided that the first run through the juicer most likely still left valuable nutrients in the greens.  I took the greens, added a pinch of water, and re-juiced them.  It was great!  Tons more juice, without using more vegetables.  Now my greens looked pretty ragged but I still had to find a use for them.  After all, they are probably still full of fiber.  Just the week before I had made hummus and my picture emerged of how I would use the leftovers.  Green hummus!

The very simple recipe for making hummus can be found here in my previous post.  It is basically chick peas, coconut oil, salt, pepper, and lemon juice.  Combine in food processor until smooth and creamy.  Follow the same directions and add your green foliage.  It mixes up great and is a lovely shade of green.  I used my green hummus on a spinach wrap, and topped it with tomatoes, cucumbers, and avocado.  It was the best vegetarian wrap I’ve ever eaten.  Maybe because I was so proud of myself for finding a use for the greens, but regardless, it was a delicious and filling dinner.  I even made myself a wrap for my lunch the next day, which I had with black bean chips I scored at our latest natural foods trade show.
