Gluten Free Apple Cinnamon Oats

Healthy Breakfast!

It’s officially almost the weekend, well, at least halfway through! On both Saturday and Sunday, I take the time to make a homemade hearty breakfast for my husband and I, giving us both time to catch up and enjoy each others company. I try to make healthier options for us and get creative in the process, which has actually become fun for me!

Using fresh ingredients, fruits, vegetables, healthy fats, and proteins are definitely a staple in creating dishes and I’m a huge advocate of incorporating coconut oil into my breakfast items.

Coconut oil is a healthy fat that contains medium chain triglycerides, which are a great source of natural energy – especially in the morning. You can add coconut oil to oatmeal, smoothies, fry eggs, or even mix in with coffee for an additional boost.

Oatmeal was always a staple for me growing up and I still enjoy eating it for breakfast. Plain oats can get boring, so this morning I decided to spice it up with steamed apples with coconut oil and cinnamon – yum! Quaker oats now have gluten-free quick oats, which have been amazing to add into my gluten-free diet.

Here’s what you’ll need:

Ingredients

Quaker Gluten Free Oats

2 Apples

1 Tablespoon Kelapo Coconut Oil

1 Teaspoon Cinnamon

Maple Syrup, to taste

Directions

  1. Cut apples into cubes and place in a bowl with ¼ cup water. Heat in microwave for approximately 2 minutes or until apples are to desired softness. Drain water and add in coconut oil and cinnamon. Mix thoroughly and set aside.
  2. Make desired amount of oatmeal per package directions. Once finished, portion out oats into separate bowls for each person.
  3. Top oatmeal with steamed apples and sprinkle with additional cinnamon, if needed.
  4. Pour desired amount of maple syrup over top and enjoy! 

This recipe has also been a staple of mine during my pregnancy and I absolutely love to make this frittata with it for a source of protein!
