It’s Memorial Day Weekend, and what better way to celebrate than with family and friends at a party, barbeque, or on a boat! My mom found this great recipe after my sister decided to become a vegetarian. This delicious vegetable wrap is so refreshing on a hot summer day. The best part about this wrap is that if you’re spending the day on a boat, you only need one hand to enjoy it!
Hummus & Veggie Wrap
-2 medium zucchini
-2 teaspoons Kelapo coconut oil
-pinch of salt and pepper
-1 cup hummus
-4 pieces whole wheat wrap
-1 medium red bell pepper
– ½ cup red onion
– ¼ cup fresh mint leaves
-2 oz. baby spinach leaves
Cut the zucchini lengthwise into ¼ inch slices. Cut the red bell peppers into long, thin slices. And slice the onion into small half moon sizes.
Preheat the pan over medium heat. Brush Kelapo coconut oil onto both sides of zucchini slices, and sprinkle with salt and pepper. Grill until slightly browned and tender.
Spread ¼ cup of hummus onto wheat tortilla. Place 3 pieces of zucchini, 2-3 slices of red bell pepper, a few sliced onions, ½ cup of spinach, and 1 teaspoon mint leaves.
Roll up into wrap, cut in half diagonally, and serve or stick in the cooler with a fruit salad for a guilt-free lunch to take with you!
*Makes 4 servings.
