I look forward to the fall season every year and all the activities you get to do during the season! My son is at the age where he is very interested in helping me with tasks so we decided to make Gluten-Free Sugar cookies. As an added bonus Aidan and I decorated them with a Halloween theme! Here is my recipe for the cookies:
Ingredients:
1 cup icing sugar (confectioners sugar)
1/2 cup brown or white sugar
2 eggs
1/2 tsp salt
1/2 cup Kelapo Extra Virgin Coconut Oil
3tsp almond extract
Directions:
Mix on high until combined.
Add: 2 1/2 cups grocery store gluten free baking mix
Mix together.
Drop by spoonfuls and flatten slightly on cookie sheet. Bake at 350 for 10 mins. Cookies will still be very pale. Cool completely.
Now, here is how Aidan and I got creative, we bought “Halloween-themed” candy to decorate the cookies with! We bought shredded coconut, candy corn, and chocolate frosting. Here is our way of decorating:
Spread the chocolate frosting on the top of your sugar cookie. Sprinkle shredded coconut on top of the frosting. Break apart the candy corn and place the pieces on your cookie.
