Goat Cheese and Caramelized Onion Flatbread

I have seen this recipe a lot lately on Pinterest and since I am obsessed with goat cheese and onions it definitely went to the top of my list of new recipes to try.  The caramelized onions mixed with the goat cheese was an amazing combination.  This flatbread is perfect for lunch or a light dinner served with a salad.  I also love making a few appetizers and serving them for dinner.  This is now among my favorite recipes for a quick and easy appetizer!

 

Goat Cheese and Caramelized Onion Flatbread

A slice of heaven!

Adapted from Garnish With Lemon

 

4 teaspoons Kelapo coconut oil

1 large yellow onion, peeled and thinly sliced

1/2 teaspoon salt

1 teaspoon sugar

1 large flatbread

Kelapo coconut oil for brushing

Kosher salt

4 ounces goat cheese, crumbled

Fresh basil, sliced into ribbons

Basil Pesto, for serving

 

Melt the coconut oil in a large saute pan over medium-low heat. Add onions and stir to coat. Cook for 15 minutes, stirring occasionally. Sprinkle the sugar over the onions and continue to cook for another 30 minutes, stirring occasionally. You’re looking for a deep, rich brown color. They may start to stick to the pan a little. It’s OK if they form a bit of a crust, but don’t let them burn. Set aside to cool when done.

Preheat oven to 425 degrees.

Place flatbread on baking sheet. Brush flatbread with coconut oil and sprinkle with salt. Top flatbread with caramelized onions and crumbled goat cheese. Bake for 6-10 minutes, depending on the thickness of your bread. (The cheese should start to melt and the edges of the bread should start to brown.)

Remove from oven and sprinkle with basil (I put my basil on before baking and it was so yummy). Cut into pieces and serve. Serve with a side of basil pesto to drizzle on top and a salad. Enjoy!
