Gluten Free Recipes

Today we’re making gluten free recipes to recognize Celiac Awareness Month starting May. While I can still eat gluten, I prefer to go gluten free for the added benefits I’ve seen on my body. Try any of these 3 recipes with your stay-at-home crew: Veggie Steak Stir Fry, Garlic Ghee Brussels Sprouts and Potatoes, and Stovetop Cinnamon Apples. I swear you won’t even tell the difference!

Veggie Steak Stir Fry

Ingredients needed:

1 lb. flank steak

2 tablespoon of Kelapo Ghee or Kelapo Coconut Oil (divided)

2 garlic cloves (minced)

2 medium carrots (peeled and thinly sliced)

½ lbs. of asparagus (ends trimmed, sliced into 1″ inch pieces)

1 red bell pepper (cut into thin strips)

1 yellow bell pepper (cut into thin strips)

6 oz snap peas

2 tablespoons of sesame seeds

1 teaspoon of kosher salt

1 teaspoon of cracked black pepper

Stir Fry Sauce

¼ cup of coconut aminos

2 tablespoons of rice vinegar

2 tablespoons of fresh orange juice

2 tablespoons of honey

1 tablespoon of cornstarch

2 teaspoon of sesame oil

Take the 1 pound of flank steak straight from the freezer after 30 minutes and thinly cut into strips of ¼ inches. Set aside so it can unfreeze. Next, prep the vegetables by cutting them. To make the stir fry sauce add all the ingredients into a bowl and whisk until evenly combined. Heat a 12-inch cast iron skillet over medium heat and add half of the Kelapo Ghee. Add half the steak to the skillet and season with salt and black pepper. Cook and stir fry until steak is charred and medium rare, this should be about 3 to 4 minutes. Remove the steak with tongs and then set aside. Repeat with the other half of the steak. Add the rest of the Kelapo Ghee and heat until shimmering, then add in the minced garlic and sauté for a couple of minutes. Add the carrots and asparagus then sauté for 3 to 5 minutes while stirring frequently. In that same pan, add the bell peppers and snap peas. Stir fry all the vegetables for an additional 3 to 5 minutes as you continuously stir. Add the steak back into the skillet with the vegetables and drizzle in the stir fry sauce on all the ingredients. Stir everything together and cook until the sauce thickens and the vegetables are tender, about 3 to 5 minutes. Remove the stir fry from the heat and drizzle the sesame seeds on top and serve with white rice.

Garlic Ghee Brussels Sprouts Potatoes

Ingredients needed:

2 lb. of potatoes (peeled and cooked)

5 garlic cloves (minced)

1 cup of onions (chopped)

3 teaspoons of garlic powder

2 cups of brussel sprouts (cleaned and halved)

¼ cup of Kelapo Ghee

Salt (to taste)

Black pepper (to taste)

Boil the peeled and chopped potatoes, but don’t cook them all the way. Boil for about 15 to 20 minutes, depending on the type of potato. To make the Garlic Ghee Brussel Sprouts, heat a pan with half of the Kelapo Ghee and add the onions, brussel sprouts and minced garlic. Cook and roast for about 10 minutes until lightly browned and golden. Add the garlic powder, potatoes and the other half of the Kelapo Ghee to cook for another 10 minutes until the potatoes are done. Enjoy this side dish with any chicken or steak!

Stovetop Cinnamon Apples

Ingredients needed:

3 cups of apples (chopped)

2 tablespoons of water

1 tablespoon of Kelapo Coconut Oil

1 tablespoon of Maple Syrup

½ teaspoon of ground cinnamon

⅛ teaspoon of salt

¼ teaspoon of pure vanilla extract

When cutting the apples, make sure they are the same in size about 1’ inch cube pieces. Put the apples into a skillet with the water and then cover the pan. Cook the apples over medium heat for about 5 minutes until apples become slightly soft and water is absorbed. Next, add the Kelapo Coconut Oil to the skillet and stir apples together until they are coated. Cook for another 5 minutes until apples become soft. Uncover the apples and add the maple syrup, cinnamon, salt and vanilla extract until well mixed then cook for another 5 minutes. Remove from skillet and serve with cookies or fresh ice cream!
