I’m always on a mission to come up with ways to make my favorite foods a bit healthier. Last night, I was craving a quesadilla, but didn’t want all the fat from the cheese and bloating from gluten that’s found in most tortillas. Instead, I decided to improvise! I went to the grocery store and picked up some alternative items that would help satisfy my craving, but still be healthy for me. Here’s what you’ll need:
½ pound of chicken breast
½ teaspoon salt
½ teaspoon pepper
1 tablespoon Kelapo Coconut Oil
¼ cup Kraft Fat-Free Cheese
1. Cut chicken breast into 1/2 inch cubes and chop the onion into thin strips. Next, place a pan on medium-high heat. Add in coconut oil, onion strips, and chicken. Season with salt and pepper.
2. After the chicken and onions are sautéed, add the cheese on top of the mixture. Placing a lid over the pan will help the cheese melt quickly.
3. To warm the tortilla, place in between two paper towels for 15 seconds in the microwave.
3. Once the cheese has melted, remove the mixture and serve over the warm tortilla. To make a wrap, fold the tortilla over the chicken mixture and enjoy!
I like to add salsa and fat-free sour cream to this dish as a finishing touch. You can also pair it with our freshly made avocado dip!
