Garlic Mashed Cauliflower

One of my favorite side dishes are mashed potatoes, but they are loaded with starches! I have been looking for an alternative and finally found the courage to try mashed cauliflower. Now, something you should know about me is that I am a very picky eater and I do not like a lot of different vegetables. I am fine sticking with steamed green beans and carrots, but I was finally convinced that I must try this healthier alternative. I must say I was pleasantly surprised by how great they tasted!

Here’s what you’ll need:

Ingredients:
1/2 head of cauliflower broken into 2 inch florets
1 tbsp Kelapo Coconut Oil
1/2 cup cottage cheese
1/4 cup light cream cheese
1/2 tsp garlic powder
salt and pepper, to taste

Directions:
1. Bring a large pot of salted water to a boil. Add coconut oil and cauliflower and return to a boil.

2. Continue boiling over medium heat for 20 minutes or until cauliflower are soft.

3. Drain cauliflower. Using a bowl, press down on cauliflower to squeeze out excess water. Mix up and press again.

4. Pour cauliflower and all remaining ingredients in food processor and puree until you get your desired texture. Salt and pepper to taste.

5. Serve and enjoy!
