Game Day Snacks to Make Sure Everyone Wins
Gameday is almost here! As excited as I am for the game this also means we’re hosting the watch party at our house. Everyone knows that’s the code word for having to prepare snacks, appetizers, drinks, and decorations. The whole nine yards. I love having hosting parties, but it can get tricky with friends that have food sensitivities or are on any kind of diet/lifestyle. For this reason, I’m sharing my favorite snacks to make that are Keto, Paleo and even gluten-free!
Bacon-wrapped Brussel Sprouts
This is one of my favorite go-to recipes when I’m having people over. It’s simple and easy, plus it’s the perfect finger food.
Ingredients needed:
12 slices of bacon
12 brussels sprouts (stem trimmed)
1 tablespoon of Kelapo Ghee (melted)
12 toothpicks
Salt (to taste)
Black Pepper (to taste)
Kelapo Ghee Non-Stick Cooking Spray
Dip
5 tablespoons of mayonnaise
1 tablespoon of balsamic vinegar
First, preheat the oven to 400 degrees. Next, grease a baking tray with Kelapo Ghee Spray. After rinsing off the brussel sprouts and letting them dry, take a cooking brush then lightly coat the brussel sprouts with the Kelapo Ghee. Once coated, wrap one bacon strip around each brussel sprout and secure with the toothpick. Place in the baking tray and sprinkle with salt and pepper to taste. In my case, just a teaspoon of each will do. Place the tray in the oven and bake for 40 minutes.
To make the dip, simply mix ingredients in a serving bowl and place with brussel sprouts are ready!
Air Fryer Fried Pickles
This recipe is an all-time family favorite! Also, it’s Keto, Paleo and Whole30 approved. For this recipe, you’ll need an air-fryer.
Ingredients needed:
2 cups of dill pickle slices
1 tablespoon of coconut flour
1 large egg
1 cup of ground-up pork rinds
½ teaspoon of garlic powder
½ teaspoon of paprika
¼ teaspoon of ground black pepper
Sea salt (to taste)
Kelapo Ghee or Kelapo Ghee Non-Stick Cooking Spray
Begin by preheating your oven to 400 degrees. Make sure that all the pickle slices are dried and then place in a large bowl. Sprinkle the coconut flour on the pickles and make sure they are all fully coated. In a separate bowl, add the egg and whisk. Then in a médium sized bowl, add the crushed pork grinds, garlic powder, paprika, salt, and pepper and mix all the ingredients. One by one, take each slice and coat it with egg. Next, coat with the pork grind mixture. Place them into the air fryer in a single layer. To make them extra crispy, gently brush melted Kelapo Ghee on top or use the Kelapo Ghee Spray. Air fry the pickles for 10 minutes. Remember to flip them half-way and coat the other half with more Kelapo Ghee. Serve with your favorite sauce! I usually make sriracha aioli
