Galentine’s Day Brunch

If you’ve seen Parks and Recreation then you know what Galentine’s Day is, but if you haven’t here is the rundown as quoted by Leslie Knope. “Galentine’s day is when you and your friends leave your husbands and boyfriends at home and kick it breakfast style. Just ladies celebrating ladies”. Couldn’t have said it any better than Leslie Knope (watch the video if you want a laugh)! February 13th is about celebrating all the girls in your life with an amazing breakfast spread and of course, mimosas! I’ve catered the blog today for Galentine’s Day and girls, are you in for a treat (pun intended)!

This Galentine’s Day menu is brought to you by my love for the show Parks and Recreation so enjoy these delicious recipes to make for your brunch!

Breakfast Frittatas

This recipe is perfect for brunch because it serves about 8 people. Also, feel free to switch out the veggies in this frittata. Green and red peppers are always a great add on.

Ingredients needed:

6 eggs

½ cup of heavy cream

1 teaspoon of salt

½ teaspoon of pepper

Kelapo Ghee Spray

4 strips of bacon (chopped)

1 onion (diced)

½ cup of cherry tomatoes

4 cups of spinach

½ cup of shredded cheese

Green onion (for topping)

Begin by preheating your oven to 350 degrees and in a large bowl whisk the eggs, heavy cream (or milk), salt and pepper. Leave the bowl in the fridge while you cook the bacon in an oven-safe pan. After it’s cooked, set the bacon aside and in the same pan add the diced onions and cook until they’re translucent. Then you can add your veggies, in this case, I used cherry tomatoes and spinach. Cook them for a couple minutes or until slightly wilted. Now you can add the bacon back into the pan and mix them all together. Spray the Kelapo Ghee Spray on the sides of the pan and then add the whisked eggs and the shredded cheese while making sure to stir everything well. Then take your pan and place it in the oven for about 15 minutes or until the eggs don’t jiggle anymore and harden.

Pancake Muffins

Ingredients needed:

2 cups of flour

2 teaspoons of baking powder

¼ teaspoon of salt

2 eggs

1 ½ cups of milk

2 tablespoons of maple syrup

2 tablespoons of Kelapo Ghee (melted)

2 tablespoons of chocolate chips

¼ cup of blueberry

½ banana (sliced)

4 strawberries (chopped)

Kelapo Ghee Spray

Make sure your oven has been preheated to 375 degrees and in a large bowl combine the flour, baking powder, and salt. Next, add in the eggs, melted Kelapo Ghee and maple syrup, and whisk away! Add in the milk as you’re whisking the ingredients. Take a 12-cup muffin tin pan and spray with Kelapo Ghee Spray so the pancake muffins come out smooth. You’ll want to evenly distribute the batter into each cup so there is enough room to add the toppings. Top with blueberries, banana slices, strawberry slice and chocolate chips for added variety! Lastly, bake for about 20 to 25 minutes or until the toothpick comes out clean. Drizzle maple syrup for added sweetness.

Strawberry Lemonade Frozen Sangria

I know you love the sound of this as much as I do! I mean, is it really brunch without mimosa or wine? For all those big girls out there, this one is for you.

Ingredients needed:

1 bottle of white wine (half frozen)

1 ½ cups of lemonade (frozen)

1 ½ cups of frozen strawberries

1/3 cup of rum

Combine all ingredients in a blender and blend thoroughly. Then serve and enjoy!
