Frankensteining Recipe

It’s fun to get in the spirit of the holidays and as Halloween approaches, I’ve thought of a Frankensteining recipe to make! The idea behind Frankensteining recipes is to take an original recipe and switch it up by swapping some ingredients or adding extra ones.

Slutty Brownies

These brownies have become all the hype in the last couple of years. With good reason too! I’ve added peanut butter to the cookies to give it a different flavor and switched up the butter ingredient to ghee and 50/50 blend of coconut oil and ghee. Which is the perfect lactose-free substitute when baking or cooking.

Ingredients needed:

Chocolate Chip Cookie Layer

1 cup of Kelapo Ghee (melted)

¾ cup of brown sugar

¾ cup of white sugar

2 large eggs

1 teaspoon of vanilla extract

2 ¼ cups of almond flour

1 ¼ cup of chocolate chips

1/3 cup of peanut butter (melted)

24 Oreo cookies

Brownie Layer

2/3 of Kelapo 50/50 blend of Coconut Oil and Ghee

8 ox semi-sweet chocolate (finely chopped)

1 ½ cups of white sugar

3 large eggs

½ cup of almond flour

2 tablespoons of cocoa powder

½ teaspoon of salt

Start by preheating the oven to 380 degrees. Line a 9×13 inch pan with parchment paper and leave the overhang around the sides. Also, if you want to be a little extra then grease the parchment paper with Kelapo Ghee Spray.

The chocolate chip cookie layer is the first layer so that’s where you’ll start. In a medium-sized bowl, add the melted Kelapo Ghee, brown sugar and white sugar. Using a whisk or a hand mixer beat them together. In that same bowl add the eggs, vanilla extract, and melted peanut butter, and do the same process as before. With the hand mixer on low speed, beat in the flour and salt. Using a non-stick spatula stir in the chocolate chips while making sure they’re evenly distributed in the dough. With the non-stick spatula spread the mixture through the pan making sure to smooth down. The idea is to create an even layer. On top of the cookie dough layer, you’ll need to place the Oreos and if you have extra chocolate chunks you can spread them on top with the cookies. You should get about 6 rows of 4 cookies.

The last layer is the brownie batter. In a separate bowl, add the Kelapo 50/50 blend and chocolate in a microwave-safe bowl and place in the microwave for 1 minute in 20-second intervals, or until it’s completely melted. Make sure to stir every time you take the bowl out. In a separate bowl, whisk together the eggs and sugar. In that same bowl, add in the melted chocolate and whisk together gently. Now, add in the flour, cocoa powder, and salt while making sure to fold in the ingredients using a non-stick spatula. Pour that last layer on top of cookies in the pan. Spread down to make sure the layer is smooth. Pop the pan in the oven and bake for about 50 to 55 minutes. If by any chance the top is starting to burn, place a piece of aluminum foil on top. I suggest checking after 30 minutes and 10 minutes after that to see how the brownie is coming along. Once they’re done baking, let cool for about 4 to 5 hours and then cut and serve.
