Fancy Food Show Samples: Sweet Potato Bites

We just got back from the Fancy Food Show in Washington DC!  Throughout the show we were handing out samples of sweet potato bites served with 3 different dipping sauces.  The sauces included spicy peach ketchup, BBQ aioli, and Keylime marshmallow swirl.  All of the samples were made with Kelapo Coconut Oil. Erin’s favorite was the spicy peach ketchup and Alison loved the Keylime marshmallow swirl.  Want to try them for your self?  Check out the recipes below, but unless you want a ton of leftover sauce make sure to scale the recipes down because each recipe yields 2 cups.

Sweet Potato Bites

Ingredients

1 ½ lb Sweet Potatoes

¼ Cup Kelapo Coconut Oil

½ Tsp Kosher Salt

½ tsp Paprika

Preheat oven to 425 degrees. Line a Baking Sheet with aluminum foil. Cut the Sweet Potatoes into about 1 inch cubes.  Place the Sweet Potatoes in a resalable plastic bag and add coconut oil, salt and paprika. Seal the bag and shake well to coat the fries. Spread the potatoes out onto the baking sheet in a single layer. Cook for 25 minutes, turning every 10 minutes, until slightly browned and crispy.

 

Spicy Peach Ketchup

Ingredients

3 Sliced Peaches
3oz Ketchup – #10 Cans
1 Bunch fresh cilantro
Kosher salt
1oz Ginger Puree
2 tbs Chopped Garlic
1 Bunch green onion
1 cup Caramelized Onions
1 tsp Jamaican Jerk Rub
¼ cup Kelapo Coconut oil

In a blender add sliced peaches, caramelized onions, coconut oil, green onions and ketchup and pulse mixture. Wash cilantro and finely chop the bunch. Add the cilantro, ginger puree, chopped garlic and jerk rub to the mixture and stir.

 

Chipotle BBQ Aioli

Ingredients

1 cup Heavy Mayonnaise 1.5
1 cup Sour Cream 5#
2 tsp BBQ Cattleman Smokey Sauce
1 bunch fresh cilantro
 Salt to taste
 ¼ cup Kelapo Coconut Oil

Mix together heavy mayonnaise, sour cream and coconut oil together until smooth and creamy.  Add the BBQ Smokey Sauce to the mixture and stir. Wash cilantro and finely chop the bunch. Add the cilantro to the creamy mixture. Use salt to taste.

 

Keylime Marshmallow Swirl

Ingredients

1 ½ Cups Marshmallow fluff
1 Cup vegetable shortening
1 cup Kelapo Coconut Oil
1 cup 10x sugar
juice of 2 limes
¼ tsp lime zest

In a work bowl of a stand mixer fitted with the patted attachment, beat together the marshmallow fluff and the vegetable shortening and coconut oil starting on low and increasing to medium speed until the mixture is smooth and fluffy, about 3 minutes. Reduce the speed to low, add the confectioner’s sugar, the lime juice & beat until incorporated. Add lime zest increase mixer speed to medium and beat until sauce is smooth, about 2 minutes.
