Erin’s Top 5 Uses for Coconut Oil on Starches

I am not a big meat and potatoes kind of person.  I’m not a pasta and carbs kind of person either so it seems a little strange that I can come up with this top 5 list.  However, I LOVE these five favorites with coconut oil and do make them pretty regularly at my house.  (Which is also a surprise because I don’t make much!) These dishes may not be that challenging or gourmet but they are crowd-pleasers because there is something about the sweetness of the coconut oil and how it blends with the starches that makes the dishes scrumptious.

 

 

Top 5 Uses of Coconut Oil on Starches

5.  Potatoes– On top of baby red potatoes, mixed in mashed potatoes, or smeared on a baked potato, coconut oil excels in flavor.  Did I mention sweet potato fries?!?

4.  Cinnamon Toast– For breakfast or a sweet treat after dinner, go with coconut oil, cinnamon, and a drizzle of honey or agave on toast.

3.  Pancakes–  Fresh off the griddle or re-heated on a workday morning, either way, I’m spreading coconut oil my hotcakes instead of butter.

2. Garlic Bread– Usually a gut buster, homemade garlic bread on healthy bread and a bit of coconut oil and garlic is a quick, lower-calorie version of the original.

1. Grilled Cheese– EVCO, bread, cheese, and you have yourself a real winner!  Often referred to in my house as toasty cheeses.  Make one tonight with a hot bowl of tomato soup for a cozy, Fall evening.
