Easy-To-Make Vegan Snacks

If life hands you Kelapo Coconut Oil make vegan snacks! My cousin, recently turned vegan, has opened this other world for me that I have never tried. Veganism is certainly trending whether it be for animal advocates or an improved lifestyle. While I’ve made some vegan recipes before, I haven’t eaten them. I’ve looked for different vegan snack recipes I would definitely give a try and that are also easy to make. Here is what I have come up with!

Vegan Caramel Sauce

Ingredients Needed:

¼ cup of Kelapo Coconut Oil

¼ cup of real maple syrup

2 tablespoons of almond butter

Vanilla extract or cinnamon for taste

In a large bowl add the Kelapo Coconut Oil and maple syrup. You’ll want to microwave for about 30 seconds to 1 minute until completely liquid. Whisk the almond butter in the bowl with the syrup for about 1 minute, or until the consistency changes to a more solid one. You have now made a vegan caramel sauce that you can dip into anything, or even drizzle on top! My go-to are green apples so that’s what I’ll be trying with this recipe.

Vegan Coconut Crack Bars

Ingredients Needed:

3 cups of shredded unsweetened coconut flakes

1 cup of Kelapo Coconut Oil (melted)

½ cup of monk fruit sweetened maple syrup

Get a pan that is 8 x 8 inches or a 8 x 10 inches pan and line it with parchment paper. In a large mixing bowl, add all your ingredients and stir until a thick batter remains. If the batter is not thick enough then add a little more syrup or you can add water. You’ll want to pour the mixture in the pan and then wet your hands, so you can press the mixture firmly into place. Refrigerate or freeze until it is firm, then cut the bars and enjoy!

Coconut Lime Dark Chocolate Dipped Pineapple Rings

Ingredients Needed:

8 oz of dried pineapple rings (18 dried pineapple rings; unsweetened and unsulfured preferred)

¼ cup of Kelapo Coconut Oil

2 tablespoons of cacao/cacao powder

2 tablespoons of unsweetened almond milk

1 tablespoon of maple syrup

1-2 tablespoons of shredded coconut (unsweetened preferred)

1 lime zest

Sea salt

Start by spreading all the pineapple rings on a non-stick surface and then add the coconut oil to a sauce pan until melted. Then add the cacao powder, almond milk and maple syrup and whisk them in the sauce pan until they’re smooth on medium heat. You’ll want to leave on medium-heat until the mixture is simmering for about 1-2 minutes then turn to low-heat. Dip each pineapple ring halfway into the chocolate sauce and lay flat on the non-stick surface. Sprinkle each ring with coconut, lime zest and a pinch of salt. Put them in a pan and let cool in the fridge.
