Easy Mini Spinach & Feta Quiche
I can’t get enough of all the delicious appetizers that can be made during the holiday season! I love spinach and feta on everything, from my omlettes to my pizza, it is an all time favorite of mine. I wanted to incorporate the two ingredients into a tasty finger food and thought that mini quiches would be the perfect thing. This is a very simple recipe with minimal ingredients needed!
Ingredients:
Kelapo Coconut Cooking Spray
5 eggs
1/2 cup milk
1 cup of spinach
1 cup feta cheese
1 teaspoon garlic powder
1 teaspoon onion powder
1 package of 12 frozen mini pie shells; thawed
Directions:
Preheat oven to 350 degrees. Spray a mini muffin pan with Kelapo Coconut Cooking Spray and place mini pie shells in pan. Beat eggs and milk until smooth. Chop spinach up coarsely. Add spinach, feta and spices to your egg mixture; whisk until well blended. Pour contents into the pie shells so each shell is about half full. Place in preheated oven and bake for 20 minutes.
This a a very simple recipe and something even your children could help you make! If you aren’t going to a get-together this season try making this for a quick breakfast, it’s great for busy moms! What are some of your favorite quick and easy recipes?
