Easy Innovative Pizza Pies

We know it’s National Pie Month, but it doesn’t stop at just dessert pies! I’m bringing you these innovative pizza pie recipes that’ll have your family wanting more. As everyone knows cauliflower crust pizzas have been all the rage. When I found out they were Paleo and Keto friendly I had to try them too!

Cauliflower Crust Pizza

2 ½ cups of shredded cauliflower

1 egg

2 tablespoons of coconut flour

1 teaspoon of dried oregano

½ teaspoon of kosher salt

1 teaspoon of garlic powder

½ cup of Kelapo Ghee (melted)

Kelapo Ghee Non-Stick Cooking Spray

Begin by preheating the oven to 425 degrees. Once you’ve finished shredding the cauliflower, place in a large bowl and heat in microwave. Once the cauliflower has cooled to room temperate, place in a cloth and squeeze the excess liquid out. Place the cauliflower in a fresh dry bowl and add in the coconut flour, egg, oregano, salt and garlic powder. Mix all ingredients until thoroughly combined. Grease a baking sheet with Kelapo Ghee Spray and then place the mixture on top. Push down to make a 10-inch round circle and using a cooking brush, brush the melted Kelapo Ghee on the top part of the pizza then place in the oven to bake for 15-20 minutes. Once the crust is done baking, add the desired toppings. My favorite are pesto, mozzarella cheese and slices of tomatoes. Once you’ve added your toppings, place back in the oven to bake for an extra 10-15 minutes.

Slice up and enjoy!

Pizza in a Mug

Now, this recipe can make about 2 to 3 pizza mugs so I’ve added recommended toppings below but feel free to craft your own as well!

Ingredients needed:

13.8 oz of pizza crust dough (premade)

Kelapo Ghee Non-Stick Cooking Spray

Cheese Pizza

¾ cup of a 4-cheese blend (shredded)

¼ cup of pizza sauce

Pepperoni Pizza

¼ cup of pizza sauce

¾ of shredded cheese blend

Mini pepperonis (5 to 7 max)

Tomato Basil Pizza

2 oz mozzarella cheese (sliced)

¼ cup of pizza sauce

½ of a small tomato (sliced)

½ teaspoon of fresh basil leaves

Unroll the pizza crust and using the microwave-safe mug of your choice, flip upside down and place the top of it on the crust. Using a knife, trace around the outside of the mug with it. Cut out each dough and place into the bottom of each mug then spray the dough with Kelapo Ghee Spray. Add the pizza sauce on top of the dough and spread with a spoon. Next, sprinkle the amount of cheese needed and add all the toppings of your choice. Place in the microwave for 1 to 1 ½ minute (depending on the power of the microwave) and enjoy homemade mug pizza!
