Easy Easter Breakfast
If you’re cooking Easter dinner, the last thing you want to think about it what to serve for breakfast! Make it super easy with this breakfast casserole. Don’t have some of the ingredients? Poach a little from dinner!
Ingredients
1 lb bacon
8 eggs
2 cups milk (or alternative)
¼ cup diced onion
1 cup spinach leaves
3 cups shredded Cheddar cheese
16 oz frozen hash brown potatoes, thawed
Kelapo Ghee Spray
Directions
Preheat oven to 350 degrees F. Lightly spray a casserole dish with Kelapo Ghee Spray. Cook bacon over medium-high heat until evenly browned, about 10 minutes. Drain on a paper towel-lined plate. Crumble.
In a large bowl beat together eggs and milk. Mix in cheese, bacon, onion, spinach and hash browns. Pour mixture into prepared casserole dish. Cover with aluminum foil and bake in preheated oven for 45 minutes. Uncover and bake for another 30 minutes until eggs have set.
