Garlic Bacon Pasta
Ingredients needed:
1 tablespoon of salt
1 lb of dried spaghetti
¼ cup of Kelapo Ghee
6 large garlic cloves
8 large strips of bacon (chopped)
Parmesan cheese (garnish)
Begin by cooking the pasta. Bring a large pot of water to boil and add salt. Once it’s boiled, toss the pasta in and cook for about 8-9 minutes (1 minute less than the packaging suggests). Once the pasta is ready, save 2 cups of the cooking water and then drain the pasta. As the pasta is cooking you’ll want to make the bacon. Simply add in 1 tablespoon of Kelapo Ghee to a pan and then add the chopped bacon. Cook for about 4-5 minutes over medium-high heat. While the bacon is cooking, it’s time to chop the garlic cloves. You can mince them in the food processor or chop them up. Once the bacon is done, remove the pieces but leave the oil. Reduce the heat, add the rest of the Kelapo Ghee and minced/sliced garlic. While stirring constantly, cook for 2-3 minutes, or until garlic has softened. Add ½ cup of the pasta water and increase the heat. Let the mixture boil for about a minute or two and then add in the drained pasta. Let the pasta cook for about 2 minutes and add in the other ½ cup of the pasta water. Cook until sauce is cooked and then add in the chopped bacon. Season with a bit of salt and pepper, if you prefer, and garnish with parmesan cheese. Enjoy!
