Chocolate Coconut Clusters – Yum!

Easter is officially a few days away, which means all I can think about it what sweet treats I’ll be making to go along with our fabulous feast on Sunday. If you’re in a last minute crunch for dessert ideas, then you have come to the right place! Today I will be sharing my go-to sweet Easter recipes, many of which I make each year. These can be made for brunch or dinner, totally your choice!

Instead of using butter in these recipes, I swap that out for coconut oil in a 1:1 replacement. Coconut oil is a healthy fat which is great for baking and really enhances the flavor profiles of ingredients, especially chocolate.

Chocolate Dipped Macaroons – Macaroons have always been a tradition of mine to make and are so simple! I personally love to dip the macaroons in chocolate for added flavor and appeal. Try placing small plates of finished macaroons around the table for a quick after dinner sweet treat.

Vegan Vanilla Cupcakes – Cupcakes are a great grab-and-go version of cake, which can be made mini for larger gatherings! For those who are Vegan, this is the perfect dessert idea and can be enjoyed by everyone around.

Chocolate Coconut Clusters – Made with four ingredients, I love how simple and delicious these coconut clusters are. Even better, you can decorate them for added festiveness! Get little ones involved and have fun with adding Peeps or jelly beans to these clusters – such a cute end result.

Coconut Layer Cake – This coconut layer cake is a great dessert option for someone who has to watch their sugar intake. If entertaining for a large group of guests, having this cake could really make someone’s day. Try placing a chalk board sign that is labeled “low sugar” for guests to be aware, but we promise you won’t even tell the difference!

Gluten-Free Coconut Banana Breakfast Cake – Having a gluten-free option is always nice when entertaining and this breakfast cake is perfect for Easter brunch. Coconut oil is naturally gluten-free and mixes great with the different flours that are used in gluten-free recipes. Serve with quiche and mimosas and you’re all set!
