Doughnut Day

National Doughnut Day is the first Friday in June and lucky for us it’s today! Now instead of doing your basic doughnut recipe which we’ve done before, I’ve researched Keto and Paleo approved doughnut recipes that are super tasty! So not only will you love the taste, but you’ll love that you can have 2 without feeling guilty!

Keto Chocolate Coconut Donut

Ingredients needed:

6 eggs

½ cup of coconut flour

½ cup of keto sweetener

¼ cup of cocoa powder

¼ cup of Kelapo Coconut Oil

¼ cup of Coconut butter

½ teaspoon of vanilla extract

½ teaspoon of coconut extract

½ teaspoon of baking powder

½ teaspoon of baking soda

¾ cup of paleo chocolate chips

Kelapo Coconut Oil Non-Stick Cooking Spray

Glaze

½ cup of coconut butter (melted)

4 drops of liquid vanilla stevia

¼ cup of paleo chocolate chips

1 teaspoon of Kelapo Coconut Oil

3 tablespoons of unsweetened shredded coconut

Start by preheating the oven to 350 degrees. Grab the donut pan of your choosing and spray the Kelapo Coconut Oil Spray to grease it. In a medium-sized bowl, add the eggs, coconut flour, sweetener, cocoa powder, Kelapo Coconut Oil, and coconut butter then mix until everything is thoroughly combined. Make sure to mix until you get a smooth consistency to the batter. In that same bowl add the vanilla extract, coconut extract, baking powder, and baking soda then mix using a hand mixer. Now, add the chocolate chips but make sure to use a non-stick spatula when combining the chocolate chips with the batter. Now that the batter is finished, half fill each doughnut hold on the pan and pop it in the oven for 12 to 15 minutes. Once done baking, take out of the oven and flip on a cooling rack.

To cook the glaze, place the coconut butter in a bowl where the donuts could fit in to be dipped. After the doughnuts have cooled, dip the top of each one and sprinkle the shredded coconut on top. In a separate bowl, add the Kelapo Coconut Oil and chocolate chips then place in the microwave to melt for 1 minute in 20-second intervals. Make sure to stir each time. On top of each doughnut drizzle the chocolate on the glaze and let them sit for a couple of minutes before eating.

Keto and Paleo Donuts

Ingredients needed:

2 large eggs

¼ cup of unsweetened almond milk

¼ teaspoon of apple cider vinegar

1 teaspoon of vanilla extract

2 tablespoons of Kelapo Ghee (melted)

¼ cup of granulated monk fruit sweetener

1 cup of blanched almond flour

½ tablespoon of coconut flour

¼ teaspoon of xanthan gum

1 teaspoon of ground cinnamon

1 ½ teaspoon of baking powder

½ teaspoon of baking soda

⅛ of fine sea salt

Kelapo Coconut Oil Non-Stick Cooking Spray

Toppings:

Cinnamon Sugar Coating

¼ cup of granulated monk fruit sweetener

1 teaspoon of ground cinnamon

1 ½ tablespoon of Kelapo Ghee

Chocolate Glaze

2 oz no sugar added dark chocolate

1 teaspoon of Kelapo Coconut Oil (melted)

1 teaspoon of powdered monk fruit sweetener

Start by preheating the oven to 350 degrees and greasing a mini doughnut pan with Kelapo Coconut Oil Spray. In a large bowl, add the eggs, almond milk, apple cider vinegar, Kelapo Ghee, vanilla extract and monk fruit sweetener then mix it all together using a hand mixer. Do this until you get a smooth consistency. In a separate bowl, add the almond flour, coconut flour, xanthan gum, cinnamon, baking powder, baking soda, and salt and combine. Then using a non-stick spatula combine the dry ingredients with the wet ingredients. Now, fill about ¾ of each hole in the mini doughnut pan with the batter and place in the oven to bake for 12 to 15 minutes or until they’re golden brown.

For the cinnamon coating, melt the Kelapo Ghee in a microwave safe bowl and add the cinnamon and monk fruit sweetener in another bowl. Mix the cinnamon and sweetener together. Once doughnuts are ready, dip each one into the Kelapo Ghee and then place into the bowl cinnamon and sweetener to coat completely. Repeat this step with all doughnuts.

To make the chocolate topping, place the Kelapo Coconut Oil and chocolate in a microwave safe bowl for 1 minute with 20-second intervals. Take out of the microwave each time and stir. Add the sweetener then. Once completely melted, dip the top of the doughnuts into the chocolate and let sit on a rack. Pop them in the fridge for a good 30 minutes to an hour before enjoying!
