It’s National Blonde Brownie Day and Hump Day so let’s celebrate! Today I’m trying a simple low carb blonde brownie recipe that I found on Kasey Trenum’s blog. Those of you starting the new year with a low carb and Keto lifestyle will thank me after trying this recipe! Why low carb? Well, when you’ve got 3 kids running around, easy recipes like this, without all the added sugar, are just the trick to settle them down. As a mom, you want to make them happy while also making sure that what they’re eating isn’t bad for them. I can guarantee that your kids won’t be able to tell the difference!
5 tablespoons of Kelapo Ghee (or Kelapo Coconut Oil)
1 tablespoon of heavy whipping cream
¾ cup of Monk fruit sweetener
1 teaspoon of vanilla
¼ cup + 1 tablespoon of coconut flour (Or almond flour but increase the ratio 4x)
¼ teaspoon of kosher salt
¾ teaspoon of baking powder
¼ teaspoon of xanthan gum
½ cup of unsweetened coconut
½ cup of sugar-free dark chocolate chips
½ cup of walnuts
Kelapo Coconut Oil Non-Stick Cooking Spray
You’ll want to begin by preheating the oven to 350 degrees. In a large bowl, add the eggs, whipping cream, vanilla, coconut flour, salt, baking powder, and xanthan gum then, with a hand mixer, whip the ingredients together until the batter starts to form. With a non-stick spatula fold in the unsweetened coconut, chocolate chips and walnuts. Using the Kelapo Coconut Oil Spray, grease an 8×8 baking pan and pour the batter inside. Top batter with a couple of extra walnuts and chocolate chips if you prefer, then pop the pan in the oven. Bake the brownies for 16-18 minutes, always making sure to insert a toothpick to make sure the batter is done. Once ready, let them cool down for about 5 minutes, cut and enjoy with the family!
