Cranberry Pinwheel Sandwiches

I love all of the foods and flavors that come with the fall season. I especially love cranberries, but have been looking for a way to use cranberries in everyday foods instead of fancy sauces or desserts. I think I have found the perfect solution and they would work great for any holiday parties you may have coming up.

Ingredients:

½ package of dried sweetened cranberries

1 8oz. package of cream cheese

¼ cup feta cheese

1 tbsp. Kelapo coconut oil, liquid form

1/4 cup chopped green onions

7 large whole-wheat tortillas

Directions:

  1. Combine all ingredients, except tortillas, mix well.
  2. Divide and spread mixture evenly among tortillas.
  3. Roll up tightly, wrap in plastic, and refrigerate at least one hour.
  4. Cut each tortilla into 4 pieces and serve.

**You can always add in your favorite deli meat to the wrap, just place the meat on the tortilla, then spread the mixture.

Yields: 28 pieces

I couldn’t get enough of these yummy cranberry pinwheels after I made them. Thankfully, everyone else felt the same way and kept me from eating all of them. Needless to say, I think I found my recipe for all of my potlucks this season!
