Chocolate Chip Banana Bread

When I planned the blog content for the month of May this day was at the top of my list! You have no idea how long I’ve been looking forward to it! National Chocolate Chip Day is here and that means I get to make Chocolate Chip Banana Bread! I tried this banana bread for the first time in college when my roommate’s mom made some for us, and it was out of this world! Since then I’ve always wanted to try my hand at making this dish and what better day than National Chocolate Chip Day! Now, there are so many recipes out there for this dish so I searched and searched until I found one that sounded perfect! The recipe is originally by A Sassy Spoon, but I’ve tweaked it up a bit.

Moist Chocolate Chip Banana Bread

Ingredients needed:

½ cup of Kelapo Ghee

1 cup of brown sugar

1 large egg

3-4 very ripe bananas

1 teaspoon of vanilla

2 cups of all-purpose flour

1 teaspoon of baking powder

½ teaspoon of baking soda

¼ teaspoon of salt

1 cup of dark chocolate chips

Kelapo Coconut Oil Non-Stick Cooking Spray

Begin by preheating your oven to 350 degrees. Using a 9×5 loaf pan place a parchment paper while making sure it hangs over the sides of the pan. Grease the pan with Kelapo Coconut Oil Spray and set aside. Next, unwrap the bananas and mash them all together. In a large bowl, add the Kelapo Ghee and brown sugar then using a hand mixer cream it all together for about 2 to 3 minutes or until a smooth consistency is achieved. IN that same bowl add the egg and whisk. Add the mashed bananas and vanilla extract on top and use the hand mixer to blend everything together. Make sure to scrape down the sides because you want to evenly distribute and blend all ingredients properly. Now, add the flour, baking soda, baking powder and salt to the bowl and mix with the hand mixer until you get a batter consistency. Add the chocolate chips and using a non-stick spatula fold them into the mixture. Last, add the banana bread mixture to the pan while evenly spreading it on the pan. Add extra chocolate chips on top and pop in the oven to bake for about 55 to 65 minutes, or until a toothpick comes out clean from inserting it in the middle of the pan. Let the banana bread cool for about 30 minutes before serve and then enjoy!
